Position Overview:

The Kitchen Sanitation Specialist is accountable for upholding cleanliness and hygiene standards for all dishware, glassware, utensils, and cooking tools, utilizing both machine and manual cleaning techniques. This role also ensures that the dishwashing area is kept clean, safe, and sanitary.

Key Responsibilities:

The primary duties and responsibilities encompass, but are not limited to, the following:

  • Efficiently wash dishes, glassware, utensils, pots, and pans using dishwashers or manual methods, ensuring all items are clean and sanitized for food preparation and service.
  • Organize and store clean dishes, utensils, and cooking equipment in designated areas.
  • Regularly clean garbage receptacles using water or steam.
  • Sort and dispose of waste, placing it in specified collection areas.
  • Maintain kitchen workspaces, equipment, and utensils in a clean and orderly manner.
  • Perform sweeping and scrubbing of floors.
  • Receive and properly store kitchen supplies.
  • Transfer supplies and equipment between storage and work areas, either manually or with hand trucks.
  • Conduct line sweeps and trash changes as necessary.
  • Ensure cleanliness and organization of storage areas.
  • Restock supplies such as food and utensils in cooking lines, refrigerators, and storage areas.
  • Execute additional tasks as required, such as cleaning and preparing various food items for cooking or serving.
  • Adhere to all safety protocols.
  • Comply with food safety and sanitation regulations.
  • Clock in and out as per shift requirements and take breaks according to policy.
  • Familiarize with and adhere to all company policies, procedures, rules, and regulations.
  • Report to the General Manager, Kitchen Manager, and other supervisors as directed.
  • Perform all duties with a sense of urgency and to the expected standards.

Essential Qualifications:

  • Demonstrated skills and experience necessary to fulfill job responsibilities.
  • Possession of a food handler's card.
  • Able to stand for extended periods, walking and standing throughout the shift.
  • Effective communication skills with team members.
  • Ability to comprehend and follow all policies and procedures.
  • Capable of lifting and carrying racks or stacks of dishes, glassware, and utensils weighing up to 50 lbs., multiple times during a shift.
  • Able to lift and empty trash containers weighing up to 150 lbs., with assistance, several times during a shift.
  • Frequent bending, stooping, reaching, pushing, and lifting required.
  • Ability to work in a hot and humid environment.
  • Awareness of potential hazards, including cuts from broken glass and metal cans, burns, and slips or trips.
  • Regular hand washing is necessary.
