Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Costa Mesa Marriott. As a key member of our kitchen staff, you will be responsible for planning and managing the production, preparation, and presentation of all food for the hotel's restaurant(s) and room service.

Responsibilities
  • Manage the daily production, preparation, and presentation of all food to ensure a quality, consistent product that meets HEI Franchise standards.
  • Oversee the maintenance and sanitation of the kitchen, equipment, and related areas to ensure a healthy and safe work environment.
  • Monitor and control labor and food costs, preparing reports and schedules to ensure budgets are met or exceeded.
  • Assist the Executive Chef in creating, costing, and implementing seasonal and special menus.
  • Perform other job-related duties as assigned.
Requirements
  • Two+ years of post-high school education, with culinary education desirable.
  • Five+ years of employment in a related position, with hotel experience preferred.
  • Advanced knowledge of food principles and practices, including management of people and complex problems.
  • Leadership skills to motivate and develop staff, with effective verbal and written communication skills.
