Key Responsibilities:

  • Manage and supervise kitchen staff, including hiring, training, and performance evaluations.
  • Develop and implement menus, recipes, and production schedules to ensure consistency and quality.
  • Coordinate food purchasing and inventory management to maintain approved food costs and labor costs.
  • Ensure compliance with health and safety regulations, and maintain a clean and organized kitchen environment.
  • Collaborate with the Executive Steward to review equipment needs, banquet plate up assistance, cleaning schedule/project status, health/safety and sanitation follow up.
  • Monitor and control food costs, labor costs, and inventory levels to ensure profitability.
  • Develop and implement training programs for kitchen staff to improve skills and knowledge.
  • Assist with catering and special events, including menu development and execution.
  • Review sales and food cost daily, and resolve any discrepancies with the Controller.
  • Ensure that excess items are utilized efficiently, and that all staff prepares menu items following recipes and yield guides, according to department standards.
  • Conduct frequent walk-throughs of each kitchen area and direct respective personnel to correct any deficiencies.
  • Develop new menu items, test and write recipes, and assist with menu engineering to improve profitability.
  • Perform other job-related duties as assigned.

Requirements:

  • 5+ years of experience as an Executive Chef or in a similar role.
  • Proven track record of success in managing kitchen operations, including food preparation, presentation, and safety.
  • Excellent leadership and communication skills, with the ability to motivate and train staff.
  • Strong analytical and problem-solving skills, with the ability to control costs and improve efficiency.
  • Knowledge of health and safety regulations, and ability to maintain a clean and organized kitchen environment.
  • Ability to work in a fast-paced environment, with a high level of attention to detail and quality.
