The manager is responsible for accurate documentation of dietary needs and works closely with a clinical dietitian to enhance the dietary department's effectiveness. Compliance with all relevant regulations at the state, federal, and local levels is paramount.
Key Responsibilities:
- Engage with new residents and their families to gather essential dietary information.
- Maintain updated dietary records by participating in care conferences and conducting regular resident visits.
- Design menus and supervise the preparation and serving of meals.
- Establish basic dietary guidelines in line with nutritional essentials, considering food availability, seasonal preferences, and cost-effectiveness.
- Adjust meal quantities and contents to accommodate the diverse nutritional needs of residents.
- Conduct inspections of food quality, temperature, and presentation prior to serving.
- Collaborate with the Director of Nursing to assess the acceptability of meals provided.
- Monitor leftover food to identify preferences and improve menu offerings.
- Inspect incoming food, supplies, and equipment to ensure compliance with specifications, while maintaining records and reports on meal service, menu analysis, food costs, and inventory levels.
- Recommend procedural improvements for enhanced operational efficiency and staff training.
- Document dietary changes for residents discussed in care conferences.
Qualifications:
- Must possess a Dietary Manager's Certificate or enroll in a certification course within a specified timeframe.
- Preferred experience includes two years in food service supervision within long-term care settings.
- Proficiency in computer skills is advantageous.
- Strong leadership and communication abilities are essential.
Compensation is commensurate with experience.
