Executive Chef Job Description

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team at the Delta Sky Club DTW. As an Executive Chef, you will be responsible for overseeing all culinary functions, ensuring exceptional quality and presentation of food, and managing a team of engaged and focused associates.

Key Responsibilities:
  • Plan and implement regular and modified menus according to established guidelines and in collaboration with the Delta and Eurest culinary leadership team.
  • Follow standardized recipes, portioning, and presentation standards, and complete daily production worksheets and waste log sheets.
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety, and sanitation based on Company and regulatory standards.
  • Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas, and ensure that kitchen staff follows and completes schedules as assigned.
  • Maintain inventory of all supplies to stay within established guidelines while assuring that necessary product is available when needed.
  • Makes all decisions regarding utilization of leftover food products staying within Company guidelines for such products.
  • Comply with federal, state, and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits.
Requirements:
  • A.S. or equivalent experience.
  • Minimum of three to five years of progressive culinary/kitchen management experience, depending upon formal degree or training.
  • Fine dining, Executive Chef leadership experience is a must.
  • High volume, complex foodservice operations experience - highly desirable.
  • Demonstrated success leading an engaged, focused culinary team; you're an emotionally intelligent leader with a track record of building great teams.
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Business systems savvy and reporting acumen (to include MS Office).
  • ServSafe certified - highly desirable.
