Job Summary

Cut, trim, and prepare meat for use in food production or sale in retail establishments.

Key Responsibilities
  • Work with suppliers to determine order details and price.
  • Receive, inspect, and store meat in accordance with food safety and sanitation standards.
  • Record and track quantity of meat received and issued to cooks.
  • Estimate requirements and order or requisition meat supplies to maintain inventories.
  • Cut, trim, bones, ties, and grinds meats to prepare for cooking.
  • Maintain sanitation and orderliness of equipment, display, and storage areas.
  • Handle food items with safety regulations in mind during preparation and service.
  • Prepare and place meat cuts and products in display counter.
  • Prepare custom cuts of meat as ordered by customers or for meals.
  • Shape, lace, and tie roasts using boning knife, skewer, and twine.
  • Wrap, weigh, label, and price cuts of meat.
  • Totals sales and collect money from customers.
