Position Overview:

The Overnight Artisan Bread Baker plays a crucial role in our culinary team, working under the guidance of the Executive Chef, Head Baker, and Pastry Chef. This position requires strict adherence to recipes, prep lists, and operational systems established by The Fifty/50 Restaurant Group. The baker will be tasked with producing a diverse range of both unique and traditional breads, which are available for retail and through our Wholesale Department. Additionally, the bread department is responsible for crafting laminated products, bagels, and has the opportunity to innovate new offerings once daily production targets are achieved.

Shift Details:

This role operates during the evening or overnight hours.

Key Responsibilities:

  • Follow detailed prep lists and recipes accurately.
  • Demonstrate basic knife skills and food handling techniques.
  • Possess a strong understanding of various bread types, including enriched and lean breads, laminated goods, scones, rolls, loaves, and other quick breads.
  • Maintain high sanitation standards while working in a station on the production line.
  • Effectively communicate ordering and preparation needs to management during shifts.
  • Ensure proper organization of walk-in and cooler storage areas.
  • Handle large volume orders from multiple wholesale clients daily, in addition to retail demands.
  • Execute nightly closing procedures to meet the standards set by supervisors and perform deep cleaning tasks weekly.

Physical Requirements:

  • Ability to stand or walk for a minimum of 8 hours, or as required.
  • Must be capable of sustained mobility for periods of up to 10 hours.
  • Ability to lift up to 50 pounds regularly.
  • Frequent reaching, bending, stooping, carrying, and data entry tasks are required.
  • Work in varying temperature environments, both warm and cool.
  • Endure high noise levels from music and traffic from guests and employees.
  • Tolerance for potential allergens, including peanut products, egg, dairy, gluten, soy, seafood, and shellfish.
  • Availability to work overnight shifts and weekends is essential.
