The Meat Processing Specialist plays a crucial role in ensuring the quality and quantity of meat products, which significantly enhances our guests' dining experience. Exceptional meat processing not only optimizes our restaurant's profitability but also guarantees that our guests receive outstanding value in both product and service.
Food Preparation Responsibilities:
- Efficiently cuts meat in accordance with product specifications and established time standards.
- Adheres to the buffet production system to maintain quality and compliance with shelf life standards.
- Regularly rotates cut and packaged meat to ensure optimal freshness.
- Organizes and stocks the Meat Cooler following approved food safety protocols.
- To prevent cross-contamination, sanitizes all surfaces between the preparation of different types of meat.
- Identifies spoiled meat by its texture and odor.
- Maintains cleanliness in the meat room according to service and quality benchmarks.
- Complies with local health department regulations.
- Utilizes administrative forms to keep an accurate inventory of all meat products and assess production levels.
- Reports any discrepancies in products or equipment to the Manager.
- Completes opening and closing administrative tasks as required.
- Maintains equipment in accordance with the Equipment Maintenance manual.
- Performs assigned duties as per the duty roster.
