The Chef De Cuisine/Kitchen Manager position at Olio Italian, an upscale, chic Italian restaurant, is a key leadership role for the back of house team. The successful candidate will be responsible for maintaining labor and food costs, managing kitchen operations, and ensuring exceptional customer service.

About the Role:

The Chef De Cuisine (CDC) will play a major role in menu development, overseeing daily administrative, operational, and culinary tasks, including sanitation and safety. This role requires a strong leader who can inspire and motivate the kitchen team to deliver exceptional results.

Responsibilities:

  • Hire, train, retain, and develop BOH team members under the supervision of the General Manager.
  • Direct supervision of Sous Chefs and BOH Supervisors.
  • Oversight of all recipes and procedures.
  • Ability to drive BOH operations to success.
  • Spot checks food requisitions for various cooking stations and ensure execution to Olio standards.
  • Assures execution of staff training programs.
  • Extensive knowledge of safety, sanitation, and food handling procedures.
  • Ensures staffing levels and management coverage are appropriate to meet business needs and maximize customer experience.
  • Selects and develops Sous Chefs and BOH supervisors for more responsibility or internal promotability into management program.
  • Takes ownership of the kitchen.
  • Supervises proper garnishing and presentation of food.
  • Ensures execution of all employee recognition and incentive programs are documented.
  • Promotes positive employee relations, including effective delegation of managerial duties, fostering high staff morale, upholding operation standards, and execution of the performance management process.
  • Optimizes financial results by driving sales and controlling costs.
  • Analyzes financial reports and develops action plans to grow revenue and control expenses to meet annual budgets.

Requirements:

  • Previous Kitchen Management and/or Sous Chef experience in an Italian Restaurant for a minimum of 1 year.
  • Previous experience in fine dining restaurants.
  • Preferred experience with homemade pasta and sauces.
  • Preferred Bachelor's degree in business or similar field.
  • Available to work evening hours, weekends, and holidays.
  • Ability to work with minimal supervision.
  • Must be at least 21 years of age.
  • Serve Safe Manager Certification or ability to obtain within 30 days of employment.
  • Ability to reach, bend, stoop, and frequently lift up to 50 pounds.
  • Ability to work in a standing position for long periods (up to 10 hours).
