Banquet Chef Job Summary

The Banquet Chef is responsible for overseeing the daily operations of the banquet culinary department, ensuring profitability and quality control. This role requires strategic leadership and direction of the banquet department to support the company's mission, core values, and goals.

Key Responsibilities
  • Develop and maintain a comprehensive file of recipes, including ingredients, portions, and preparation instructions.
  • Collaborate with the Executive Chef to create banquet menus, recipes, and specifications that meet the company's standards.
  • Establish and maintain portion control standards for each dish on the banquet menu, considering the perceived value factor.
  • Ensure consistent execution of banquet recipes and maintain high-quality standards.
  • Assume responsibility for the banquet kitchen in the absence of the Executive Chef.
  • Monitor inventory levels and quality on a daily basis to ensure proper stock and minimize waste.
  • Manage food and labor costs within budgeted guidelines.
  • Organize and lead banquet kitchen meetings to discuss best practices and address concerns.
  • Participate in performance appraisals and progressive discipline as required.
  • Assist the Executive Chef in developing and coaching staff.
  • Attend manager meetings and other mandatory meetings to stay informed and aligned with company goals.
  • Maintain the banquet kitchen's cleanliness and organization standards.
  • Conduct daily walkthroughs of the banquet kitchen area to ensure compliance with company standards.
Requirements
  • Culinary degree or equivalent training in the hospitality/restaurant industry.
  • At least 2 years of relevant work experience in a similar scope and title.
  • Experience in luxury brands or markets is preferred.
  • Food Safety Manager Certification is required or must be obtained within 30 days.
