Job Description
The successful Pastry Chef will lead all culinary operations, developing and reviewing menus, recipes, and costing, as well as establishing quality standards for food products. Key responsibilities include:
- Developing short- and long-term menu strategies to support brand positioning and business goals.
- Oversight of culinary development standards, processes, and methodologies to ensure operational excellence.
- Providing strategic direction to develop food within specified cost parameters while achieving business targets and delivering high-quality results.
- Leading the Executive Chef in overseeing day-to-day culinary operations, including preparation, production, development, and execution of recipes.
- Collaborating with the Director of Operations and General Manager to develop and leverage company purchasing and supplier networks, achieving cost efficiencies while procuring quality ingredients.
- Supporting training, development, and other professional growth opportunities, managing individual and team performance through coaching, feedback, and performance management discussions.
- Overseeing planning, organizing, monitoring, and control of all aspects of projects, ensuring engagement, commitment, and risk management, and providing ongoing communications on project status to senior leadership.
Required Skills and Qualifications
To succeed in this role, you must have:
- A minimum of 4 years of experience as a Pastry Chef in high-volume fine dining establishments.
- Proven familiarity with doughs, yeast-raised breads, custards, souffles.
- Ability to work weekends, holidays, and nights, stand for extended periods, lift 25 lbs, bend, climb, or work in confined spaces.
- Enjoyment of fast-paced work environments and ability to succeed in them.

- Extensive menu, product, and concept development experience.
- Demonstrated ability to develop culinary and beverage products in multiple-unit, high-volume environments.
- Project management skills, with the ability to achieve desired outcomes on time and within budget.
- Knowledge of current consumer behaviors, trends, attitudes, preferences, and needs.
- Ability to drive individual talent and build strong teams.
- Excellent verbal and written communication, interpersonal, organizational, and multi-tasking skills.
- A passion for delivering exceptional guest service.
- Strong ability to collaborate cross-functionally and motivate and supervise back-of-house staff.
- Ability to achieve results through flawless strategy execution and tight deadlines.
- Prior experience with P&L management, budgeting, and cost controls.
- Ability to handle ambiguity and constant change.
- Familiarity with food-related POS systems.
