This role also entails maintaining sanitation standards and ensuring personal safety by adhering to all relevant regulations and guidelines.



Key Responsibilities

  • Maintain and enforce preparation and production standards as per Aramark protocols by reviewing and approving production and temperature logs.
  • Oversee inmates during food preparation and tray assembly processes.
  • Ensure timely and efficient meal service while complying with all Aramark guidelines.
  • Participate in the preparation and serving of meals.
  • Print and distribute recipes as needed.
  • Guide inmates in utilizing Aramark recipes and instruct on proper cooking techniques.
  • Ensure that portion sizes and any special dietary needs are met.
  • Collect accurate daily population counts and review them with staff.
  • Adhere to security protocols and ensure that storage areas are secured at all times.
  • Ensure that all kitchen tools and equipment are returned to their designated secure locations and that all keys are accounted for.
  • Establish work procedures, prepare work schedules, and sanitation plans while ensuring compliance from cooks, inmates, and/or food service workers.
  • Assist in inventory management, proper receiving, and storage of food and related items, and requisition orders as necessary.
  • Engage in the preparation, storage, and assembly of meals and food items following the 5 P's (Participation, Pulls, Production, Portion Control, and Postproduction).
  • Comply with the Company's Standard of Operation for food handling and storage, following HACCP policies and procedures.

Qualifications

  • Must be at least 18 years old.
  • Preferred minimum of one (1) year of experience in food preparation or a related field.
  • Previous supervisory experience is preferred.
  • Experience working with inmates is advantageous.
  • Ability to motivate and supervise inmates and/or team members to achieve quality and quantity in food production within a correctional environment.
  • Must be able to obtain food safety certification.
  • Ability to work independently with minimal supervision.
  • Ability to demonstrate good judgment and tact.
  • Must adhere to basic safety procedures and policies.
  • Must qualify for and maintain security clearance for correctional facilities.


This position may involve physical demands, including lifting, bending, pushing, pulling, and extended periods of walking and standing. Uniforms and/or Personal Protective Equipment (PPE) may be required.
