About the Role

We are seeking a highly skilled Pastry Sous Chef to join our team at North Carolina State University's Campus Enterprises. As a key member of our culinary team, you will be responsible for overseeing the baking production staff and ensuring the highest quality of culinary standards.

Key Responsibilities
  • Provide day-to-day oversight of the baking production staff, working closely with the Executive Sous Chef and Executive Pastry Chef to maintain a high-quality baking department.
  • Maintain the highest culinary standards, providing training, supervision, quality control, and excellent customer service to the bakery staff.
  • Prepare and execute recipes for a range of baked goods, including yeast doughs, laminated doughs, pie and pastry crusts, cake batters, icings, and glazes.
  • Measure and mix ingredients according to standardized recipes, ensuring accurate and consistent results.
  • Responsible for the quality of food to be cooked, seasoned, and held correctly, according to set recipes, and presented in an attractive manner.
  • Plan daily food production and assign staff accordingly to execute the plan, ensuring adequate food quantities for service while controlling overproduction.
  • Act as team leader in the absence of the Executive Sous Chef, communicating with personnel to ensure smooth operations.
  • Organize and delegate job duties to employees as needed, supporting food production and execution for catering and special events.
Requirements
  • High School diploma or equivalency and one year of experience in food preparation or service activities in a commercial kitchen, or an equivalent combination of training and experience.
  • Understanding of how to make yeast dough, laminated dough, pie and pastry crusts, cake batters, icing and glazes, and a range of custards and fillings.
  • Knowledge of equipment, cooking methods, measurements, and food safety.
  • Able to work in a fast-paced environment, with strong written and verbal communication skills to effectively communicate with customers, peers, and supervisors.
  • Must follow written and verbal instructions, and have a high standard of excellence in completing all tasks and performance goals.
  • Provide outstanding customer service, including the ability to remain professional and respectful under pressure when dealing with difficult situations.
  • Proficient use of computers, email, and ability to learn new software programs.
  • Requires bending, twisting, pulling, and pushing, and standing for long periods of time.
  • Must be able to lift 30 pounds above head and up to 60 pounds on rare occasions, with or without reasonable accommodation.
Preferred Qualifications
  • Experience in a professional bakery.
  • Baking and Pastry experience and/or internships that have created a solid skill set.
  • Supervisory experience.
  • Previous work in a high-volume environment.
  • Previous experience with a computer food production program such as Cbord.
Required License or Certification
  • ServSafe Certification or the ability to obtain within 90 days of employment.
  • Certifications must be maintained as a condition of employment.
