Venue Overview
Legends serves as the official food and beverage partner for a prestigious collegiate sports venue, renowned for its rich history and vibrant atmosphere. This iconic stadium is home to a celebrated NCAA football team and provides a unique setting for numerous events.
Position Summary
Reporting directly to the Executive Chef, the Culinary Operations Manager will play a crucial role in supporting all culinary functions, ensuring excellence in production, operations, and sanitation throughout the venue.
Key Responsibilities
- Oversee the culinary operations within the assigned department.
- Develop daily schedules, coordinate event operations, and monitor food and labor costs.
- Ensure that all ingredients used in menu preparation meet our high-quality standards.
- Innovate menu offerings based on guest and client feedback.
- Lead the culinary team with a commitment to exceeding guest expectations.
- Monitor food preparation and kitchen activities to ensure compliance with health regulations.
- Document, cost, test, and maintain all menu specifications, recipes, and production forecasts.
- Implement inventory and labor control measures; conduct inventory counts as needed.
- Foster positive customer and client relations through effective communication and sound financial practices.
- Maintain cleanliness and organization of workstations, storerooms, and dining areas.
- Perform additional duties as assigned.
Qualifications
The ideal candidate will possess a degree or certification from an accredited culinary arts institution or an apprenticeship certification from a recognized culinary federation. A minimum of three years of experience in a high-volume food service environment is required. Proven success in enhancing kitchen efficiencies, quality, and cost management is essential.
Strong leadership, financial analysis, team-building, and customer service skills are necessary. Knowledge of kitchen sanitation and equipment maintenance is required. The candidate must be detail-oriented, organized, and able to quickly adapt to new procedures.
Proficiency in Microsoft Word, Excel, and PowerPoint is expected. Flexibility to work extended hours, including nights, weekends, and holidays, is essential. The candidate must be able to obtain Food Protection Manager Certification and demonstrate the ability to multitask in a fast-paced, team-oriented environment.
Physical Requirements
The role requires sufficient mobility to perform assigned tasks, including reaching, bending, and lifting up to 50 lbs. The candidate must be able to stand or walk for extended periods.
