Education and/or Experience
High School diploma or GED preferred and one year of related experience and/or training.
Extensive knowledge of the private club industry’s food and beverage operations
Job Summary
Manage food and beverage service in all outlets and events. Maintain cleanliness. Supervise and develops employees, order supplies, implement controls and manage effectively to ensure that budgeted food, beverage, labor, supplies, and other cost goals are maintained.
Essential Functions
Leadership
Supervises and develops personnel to assure highest productivity and conduct.
Maintains cleanliness of production and service areas, equipment, storerooms, and other areas.
Trains, supervises, schedules, and evaluates assigned staff.
Receives and resolves complaints applicable to the outlet or event.
Administration
Maintains accurate payroll time records and reports.
Ensures that required revenue and cost control procedures are consistently used.
Requisitions supplies from club’s kitchens and storerooms; ensures proper transfer and storage.
Produces daily or meal-period revenue analysis and other point-of-sale (POS) reports.
Processes member billing; completes POS daily closeout.
Provides employee schedule, payroll, service charge pool and other reports.
Maintains and monitors an inventory of all outlets, in products, supplies, small equipment, and other items.
Consistently complies with the club’s policies and procedures for the service of alcoholic beverages to members and guests.
Safety
Complies with applicable health, alcoholic beverage, fire and other laws and requirements.
Inspects outlet facility to ensure that sanitation, safety, energy management, preventive maintenance and other programs are in place in areas of responsibility.
Ability to develop and maintain awareness of occupational hazards and safety precautions; skilled in following safety practices and recognizing hazards.
Knowledge and ability to perform required role during emergency situations.
Assists with the production and service of food and beverage products, as necessary.
Develops and updates procedures manual for all outlets.
Suggests menu additions based on member and guest feedback.
Completes other appropriate assignments made by the Food and Beverage Director or Assistant Food and Beverage Director.
Licenses and Special Requirements
Food safety certification.
Alcoholic beverage certification.
Physical Demands and Work Environment
Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
Push, pull or lift to 50 pounds.
Continuous repetitive motions.
Work in hot, humid, and noisy environments.
