WHAT YOU'LL DO

As a Sushi cook, you will have the satisfaction of overseeing all aspects of sushi preparation and serving your guests at Canteen Food Hall. With your attention to detail and high personal standards you will cater to guests' sophisticated tastes, helping create a dining experience they will savor long after they have taken the last bite.

ROLE EXPECTATIONS

Duties include, but are not limited to, the following: Set up workstation according to kitchen guidelines. Prepare, season, finish, and garnish designated recipes/menu items as assigned in accordance with established recipes and guidelines. Read tickets and prepare food items accordingly with 100% accuracy. Follow standardized presentations with 100% accuracy and seek approval on presentations for special request items. Maintain quality standards set forth by management and report any inconsistencies as necessary. Inspect all refrigeration and dry storage for proper temperature, handling, and rotation of products. Wrap, label, and date all food products in accordance with SNHD standards. Work cleanly and maintain a clean and sanitary work environment in accordance with SNHD guidelines. Maintain a true understanding of the food regulations with the ability to recite upon request. Stock designated station for the next shift. Operate kitchen equipment in a safe and sanitary manner with a complete understanding of how the equipment works. Serve alcoholic beverages. Work at a station independently and efficiently with little or no assistance during regular business volumes. Prepare special requests as necessary to ensure guest satisfaction. Ability to run a POS terminal, handle a bank, and service guests at Sushi counter. Assist in the training of new employees as requested. Understand and follow written company procedures with 100% accuracy. Interact with guests in an upbeat and positive manner. Maintain cleanliness of Nama Nama, but not limited to counters, cash register, and beverage area, common cooking, and storage areas. Other duties as assigned.

SUPERVISORY RESPONSIBILITIES This position does not have any supervisory responsibilities.

REQUIREMENTS At least one year of sushi prep/line cook experience. Basic understanding of cooking techniques and proper knife skills. Strong written and verbal communication skills with the ability to effectively communicate in English. Excellent customer service skills. High school diploma or equivalent. Polished appearance and demeanor. Ability to obtain and maintain full knowledge and understanding of company and department rules and regulations, policies, and procedures. Ability to respond to inquiries from fellow employees and/or guests. At least 21 years of age.

PREFERRED At least three years of sushi prep/line cook experience in a similar professional kitchen environment. Sake service experience. Has completed formal culinary training or apprenticeship. Serve Safe Certification for Food Handling.

CERTIFICATIONS, LICENSES, REGISTRATIONS Must be able to qualify for licenses and permits required by federal, state, and local regulations. Health card and Alcohol Awareness card

Bending and reaching. Transporting, pushing, pulling, and maneuvering items weighing up to 10 lbs. Eye/hand coordination. Use of standard office equipment. Basic math. Ability to push and/or pull file cabinet drawers weighing up to 5 lbs. The ability to distinguish letters, numbers, and symbols. Ability to comply with Policies and Procedures, Job Description, daily memorandums, chemical labels (MSDS) and other instructions.

PAY RANGE The pay range for this position is $20/hour.
