Since 1987, Bienvivir has served the frail seniors of El Paso, Texas through the provision of the Program of All-Inclusive Care for the Elderly ("PACE").

PACE is a unique managed care benefit for frail seniors (referred to as participants) age 55 and older who are certified by the state as needing nursing home level care and who reside in a PACE service area. PACE programs coordinate and provide comprehensive medical and support services so that participants can remain independent and stay in their homes for as long as safely possible.

Bienvivir is currently accepting applications for the following position:

ASSISTANT COOK

The Assistant Cook under the guidance of the Cook and the Food Service Supervisor will assist, as delegated, with the daily participant, employee, and special event meals preparation according to approved menus and standardized recipes. Must be willing and able to work with others in preparing high quality food, including learning how to assume primary responsibility in the absence of the Cook. All food will be highly palatable, appealing, and cooked to maintain nutritional value, including texture modified foods.

RESPONSIBILITIES:

Leadership

1. Assumes responsibility for the Kitchen in the absence of both Cook and Supervisor, including attending morning meetings and receiving goods.

2. Organizes self (and others as required) to assure meals or services come together on a timely basis, communicating with Cook or Supervisor for any needs or Kitchen operation issues. Participate in or initiate production meetings as needed, including scheduled pre-prep for the next day.

3. Performs any assigned or as-needed cleaning in the cook's area. In the absence of the Cook assures that all critical cleaning is completed and signed off on.

4. Operate all equipment correctly and safely, including small equipment such as knives. Follow all safety protocols and monitor others to minimize accidents.

Food Services Operations

5. Adheres to Texas Food Establishment Rules.

6. Always adheres to all Health Department standards, including personal hygiene, work area maintenance and food handling. Demonstrates the highest standard specific to sanitation.

7. Weigh, measure, and mix ingredients according to standardized recipes, forecasted amounts on production sheets or food requisitions according to standards of food preparation. Communicates with the Cook if recipe is lacking in quality, taste, or volume; asks for instruction or approval to modify.

8. Communicate promptly with Cook for any shortages and awaits instructions for substitutions prior to preparation. All food substitutions must be approved and documented by the Supervisor through a Registered Dietitian.

9. Prepare and/or assure that texture-modified foods always meet the defined textures.

10. Awareness and maintenance of temperature standards throughout the food handling process. Records temperatures accurately and assures that all foods sent out for service are at ideal temperatures and correct doneness level for all batches. Takes corrective measures if any items fall out of the required temperature range and into a danger zone.

11. Observe and test foods beyond temperature to determine a quality product by tasting, asking others, including the Cook or Food Service Supervisor, for opinion.

12. Pan up or portion foods according to steam table space, recipe instructions and spreadsheet to assure adequate yield and timeliness of service.

13. Assists in set-up of service line(s) and replenishing food according to service needs.

14. Set-up employee meal service area, assuring all foods and supplies are available; inspect that food temperatures are appropriate, quality and taste is acceptable.

15. Assure prompt quality meal service, including responsiveness to the needs of the participants as well as to other departments is always demonstrated.

16. Assist in the set-up and/or packaging of home-delivered meals with quality and temperature-safe foods. Handle meal leftovers promptly and under the guidance of the Cook, whether for disposal, planned leftovers or freezing.

17. Communicates needed repairs, so work orders may be placed.

18. Set-up, prepare, and serve special functions as needed.

19. Assists in the training of new employees.

20. Calls and surveys Participants regarding their meals/home delivered meals when instructed.

21. Assists in covering extra stations during staff shortages.

22. Participates in team meeting/huddles and teamwork exercises.

23. Other duties as assigned by Cook, Kitchen Supervisor, or the Food Service Assistant Manager.

QUALIFICATIONS / REQUIREMENTS:

1. High School diploma or GED equivalency.

2. One year's experience working in all aspects of food service.

3. Current Food Handler Card

4. CPR Certified

5. Bilingual preferred (English/Spanish).
