**As a Sushi Bar Sous Chef you will**

* Have 2+ years of high-volume culinary management experience in a sushi/raw bar

* Expertly cut, slice and filet different types of fish

* Prepare and coach a team to prepare sushi dishes in accordance with food health and safety regulations and restaurant standards

* Customize guest orders according to preference and food allergy considerations

* Communicate with service staff to ensure that special requests and food allergy considerations are met

* Demonstrate a working understanding of business operations and financials

* Regularly take inventory of food supplies and other products

* Manage shifts which include daily decision making, scheduling and planning

* Create memorable dining experiences by exceeding guest expectations

* Demonstrate ingredient knowledge and understanding of culinary trends

* Ensure adherence to recipes, safety practices and sanitation standards in the kitchen

* Perform calmly and effectively in a high-volume, open kitchen, interacting with guests

* Manage on-the-fly requests with ease and poise

* Understand POS systems and inventory control systems

* Coach, lead and develop culinary team

* Drive continuous improvement
