Job Title: Chef Reports to: Executive Chef

Job Summary:
The Chef will primarily be responsible in the preparation of food for nutritious and attractive meals for
resident’s dining pleasure.
Employment Relationship:
This position is “at will” position and the employee and employer are free to sever the relationship at any
time with or without cause. A minimum of 14-day notice of the intent to resign is requested for this
position.


Probation Period: 90 days.


Essential Duties and Responsibilities:
The employee must be able to perform the essential job functions with or without reasonable
accommodations. Except as specifically noted, the following functions are considered essential to this
position:
a) Prepare food daily as outlined on the weekly menu plan.
b) Portion food products prior to cooking according to standard portion sizes and recipe specifications.
c) Must be able to follow printed recipes and proper plate presentation for all dishes.
d) Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers,
ovens, grills, fryers and a variety of other kitchen equipment.
e) Know and comply consistently with the community standard portion sizes, cooking methods, quality
standards and kitchen rules, policies and procedures.
f) Maintain a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta
cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
g) Prepare item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering,
breading, seasoning and/or marinating.
h) Identify food and supplies needed for the next week’s menus and report to the supervisor.
i) Handle stores and rotate all products properly.
j) Assist Executive Chef with ordering food and supplies needed to successfully meet Residents
nutritional needs.
k) Assist with menu planning; review and adjust menus with supervisor to accommodate food in
season, vendor sale prices, special events and holidays.
l) Alter or adapt recipes in collaboration with Executive Chef to provide best possible food product.
m) Prepare meats for storage and portion control upon delivery; ensure proper storage of all delivered
foods and ingredients. Promote proper handling, labeling and storage of food for infection control.
n) Report concerns or observations about residents to supervisor.
o) Monitor portion control to meet residents’ requests and minimize waste.
p) Monitor and record temperatures and chemical levels on kitchen equipment as instructed.
q) Notify Lead/Director of malfunction of equipment or appliances.
r) Practice safety in working with and around kitchen equipment.
s) Establish and maintain constructive working relationships with coworkers, residents, families and
visitors.
t) Maintain confidentiality of verbal and written information pertaining to residents, community
operations and personnel.
u) Must maintain personal hygiene in accordance to OSHA regulations.
v) Perform other tasks as assigned by supervisor
w) Able to understand and to follow written and verbal directions. Able to effectively communicate with
staff members and residents through verbal and/or written means. Demonstrates ability to prioritize
tasks/responsibilities and complete duties/projects within allotted time.
x) Knowledge of emergency disaster procedures of community. Able to locate nearest exit, to
understand and respond to written or oral instruction in case of emergency. Working knowledge and
ability to comply with community policies and procedures for workplace safety. Sufficient mobility
and strength to move freely through the building, to always assure resident safety and to assist,
transfer or otherwise move residents of the community out of danger in case of emergency.
y) Demonstrates respect for co-workers and responds to needs of residents by complying with
community policies on attendance, punctuality and dress code. Able to arrive and begin work on
time and to report for duty as scheduled on all shifts, including evenings, nights, weekends and
holidays. Attend all in-services, safety meetings, staff meetings and/or other meetings as called upon.
Able to adjust work schedule according to the resident needs due to calendared events.
z) Adaptability and flexibility in dealing with challenging or emergency situations, and ability to remain
calm when dealing with residents and their family members, with a positive and pleasant manner
and kind tone of voice.


Additional Responsibilities:
Employee must have a great personality and enjoy working with seniors. Employee must be patient, caring
and can do task at a slower pace in order to accommodate all residents’ needs.


Knowledge, Skills and Abilities Required:
a) Age 18 or older.
b) High School Diploma or GED required.
c) Maintain current First Aid and Food Handlers certification.
d) A minimum of 2 years of experience in kitchen preparation and cooking.
e) At least 6 months experience in a similar capacity.
f) Ability to read, write, speak and comprehend the English Language.


Physical Requirements of the Job:
Speaking and hearing required to perform job responsibilities; reading/writing; understand directions and
communicate verbally. Specific vision abilities required include color, close and far vision acuity, depth
perception and ability to adjust vision focus. Manual dexterity to peel, cut, and prepare variety of foods;
keen sense of smell and taste. Employee must have the ability to climb, balance, kneel, crouch, reach,
walk, sit, lift, grasp, perform repetitive motions involving bending, twisting, stooping, pushing, pulling,
wrist motions and foot operations. Employee must have the ability to stand for an extended period of
time without significant rest period and lift more than 50 lbs. or more with assist.

 

Working Conditions:
a) Work is performed in a residential community setting and may involve exposure to unusual elements
such as high noise levels, extreme temperatures (e.g. heat from hot ovens, grills, ranges and cold from walk-in coolers and freezers), and smoke; may require attendance at evening and/or weekend events
b) Exposure to body fluids, infection, odors and behavior of residents that may be aggressive, combative
or demanding.
c) Exposure to chemical and respiratory hazards is possible.
