Dietary Service Manager

Responsible for the daily operations of foodservice department of Birkwood Village of Fort Long Term Care and Assisted Living. Provide leadership and guidance to ensure that food quality, safety standards and resident expectations are met. Maintain records of department personnel, income and expenditures, menus, food, supplies inventory levels and equipment.

Principle Tasks

Operations Management

  • Recruit, interview, hire, train, and coach employees

  • Develop work schedules to ensure adequate staff to cover each shift

  • Create and monitor budgets for a cost-effective program

  • Work with residents, families, facility staff, consultants, vendors and other service providers

Food Service Management

  • Participate in menu planning, providing therapeutic diets and keeping up with industry trends

  • Inspect meals and assure that the standards for appearance, palatability, temperature, and serving times are met

  • Manage the preparation and service of special nourishments and supplemental feedings

Food Safety

  • Assure safe receiving, storage, preparation and service of food

  • Prepare cleaning schedules and maintain equipment to ensure food safety

  • Ensure proper sanitation and safety practices of staff

Nutrition and Medical Nutrition Therapy

  • Process diet orders and diet changes

  • Complete the assigned MDS section according to required timeline

  • Determine resident diet needs and develop appropriate dietary plans in cooperation with RD and nursing staff

  • Develop and review plan of care related to nutritional status in cooperation with interdisciplinary team

General Knowledge, Skills and Abilities

  • Skill in motivating, coaching and supervising foodservice personnel

  • Intermediate computer skills

  • Effective oral and written communication skills

  • Demonstration organization skill

  • Current awareness of legislation and regulations influencing the practice of standards of care

Education Requirements

  • Prior experience in healthcare foodservice preferred

  • Successful completion of Certified Dietary Manager exam within first year of employment.

Physical Demands

  • Able to lift and carry more than 50 lbs

  • Able to withstand extreme temperatures, hot and cold

  • Flexible schedule including some evenings, weekends and holidays as needed

  • Able to interact positively with people of all ages.
