As one of most highly trained on staff, the Pastry Sous Chef must be a leader of quality and creativity in the kitchen. Must be a good trainer, delegator and motivated to help Dog Tag Bakery reach our goals and fulfill our mission. Work schedule must be flexible.

Key Responsibilities and Duties:

  • Assist and supports Head Chef
  • Maintain a positive and respectful work environment
  • Offer guidance and support to cooks, bakers and stewards, and FOH
  • Assist in the execution and compliance of Health and Safety standards, including CDC COVID-19 guidelines, as well as the Rules and Standards as listed in the Dog Tag Employee Handbook
  • Ensure all product is kept to Dog Tag Bakery standards
  • Control inventory and production levels
  • Help with the selection and training of new employees
  • Help with training and education of fellows
  • Work across departments on special requests and projects
  • Attend and contribute to back of house meetings
  • Attend management meetings when necessary
  • Communicate staffing, equipment and ingredient needs to Head Chef
  • Help keep food and labor cost on budget
  • Place orders for small equipment when needed
  • Help the Head Chef with ordering of normal bakery goods
  • Research and test recipes for new menu and seasonal items
  • Maintain an understanding of the program, as well as assisting with curriculum and assisting the Head Chef with rotation

Qualifications:

  • Strong organizational, management and communication skills
  • Clear understanding and enthusiasm for Dog Tag Inc. mission
  • Good attention to detail
  • Works well under pressure
  • Quickly recognize and resolve problems
  • Must operate machinery in a safe manner and report unsafe conditions
  • Must be able to multi-task effectively
  • Must be able to lift and carry up to 50lbs
  • Must have flexibility in schedule
  • Highly responsible, punctual and reliable
  • Associates in Culinary Arts or equivalent
  • Must be able to read, write, use simple math, follow and give oral and written instructions.
  • ServSafe Food Manager Certificate
  • 2+ years of industry experience
