The Opportunity

Little Bear Catering is a growing event and catering company that is currently looking for an experienced catering sous chef who loves a flexible schedule with great pay We are seeking ambitious, skilled, and team-orientated chefs to help lead our prep kitchen as well as on site at catered events.

Responsibilities

  • Assist the Lead Chefs with menu creation, prep sheets, shopping lists, and inventory maintenance. 
  • Review event menus and customer orders to determine type and quantities of food to be prepared and comply with all portion sizes, quality standards, department rules, policies, and procedures
  • Participate in and supervise the production, preparation, and presentation of all foods for unit(s) as assigned by the Lead Chefs to ensure that a consistent quality product is produced
  • Supervise kitchen staff and off-site cooks at events. This includes scheduling, training, counseling, and recommending disciplinary action, as appropriate.
  • Effectively lead by example and ensure communication and cohesive team environment in the kitchen
  • Set up, operate, and clean kitchen equipment, according to correct procedures as well as keeping workstations clean, organized, sanitized, and sufficiently stocked including maintaining kitchen and storage facilities in a clean and organized fashion
  • Support the Lead Chefs in ensuring a sufficient inventory is maintained to meet daily needs, record deliveries, address discrepancies, and assist with storage
  • Assist with the procurement of ingredients and supplies as requested by the Lead Chefs
  • Foster and maintain client relationships alongside the Lead Chefs and the Catering Manager
  • Identify opportunities to increase revenue and decrease costs through effective waste management and cost control measures.
  • Supervise and train kitchen staff in food preparation, safety, and sanitation.
  • Ensure proper food temperatures are maintained, food is stored correctly, the freshness and quality of all menu items is achieved, and orders are packaged to proper specifications
  • Ensure compliance with health and sanitation regulations
  • Perform other duties as assigned

 

Qualifications

 

  • Capable of working in a fast-paced environment with a high level of attention to detail
  • Comfortable with high volume production and large batch cooking
  • Strong time management and multitasking skills with the ability to work under pressure
  • Ability to work as a team player as well as be an effective leader 
  • Excellent interpersonal, customer service, and oral/written communication skills
  • Superior communication skills with the ability to communicate effectively with fellow kitchen staff, off-site catering event staff, as well as event clients 
  • Thorough knowledge of safe and sanitary food handling practices  
  • Ability to work cleanly, efficiently, and quickly
  • Organized and reliable 
  • Possess a strong commitment to quality service and dedication to industry trends with a focus on quality, production, sanitation, safety, food cost controls, and presentation
  • An eye for beautiful presentation and a drive to always improve
  • Candidate must be willing to be hands on with staff and operations and be willing to work event-based hours that include evenings and weekends and some holidays

Flexibility for an on-call schedule, weekend and evening availability

 

Preferred Experience  

 

  • 3-5 years catering experience in a supervisory role
  • Experience selecting/purchasing ingredients from local markets/suppliers allowing for the ability to assistLead Chefs with procurement of ingredients and supplies as needed
  • Knowledge of international cuisines and different cooking techniques - Strong familiarity of differentsauces, ingredients, and world spices
  • Computer literate- proficient in use of POS Point of Sale systems, Microsoft Excel and knowledge of kitchen software/applications.

 

Requirements:

  • Previous catering experience required
  • Culinary degree or certification from an accredited culinary school preferred.
  • Proven experience as a sous chef or in a similar culinary role
  • Exceptional culinary skills, including proficiency in a variety of cooking techniques.
  • Ability to effectively manage the kitchen staff, motivate them and assign duties fairly
  • Experience with portable kitchen equipment (i.e., flattop grills, portable burners, fryers, etc.)
  • Ability to read and comprehend prep sheets, recipes, and food abbreviations
  • Basic math skills, with the ability to calculate and follow recipe measurements
  • Must have requisite food handing permit
  • Must have reliable method of transportation
  • Must have a valid Driver’s License
  • Fluent in English

 

Physical Requirements

 

  •  Must be able to lift, move, pull, and carry 50 lbs. or more
  • Ability to stand for long periods while also bending, lifting, and reaching
  • Occasionally kneel, crouch, and climb as required

  • Must be able to seize, grasp, turn, and hold objects with hands
  • Ability to move quickly as needed in and around the prep kitchen
  • Exposed to variable temperatures, damp environments, and moderate to high noise levels

 

Schedule

Full time schedule; open availability preferred. Hours and days may vary, weekends are required. Weekends,nights, holidays, day shifts for prep kitchen; more details upon interview

 

Compensation

Prep kitchen hours: $22-$25/hr

Off-site events: $25-$28/hr (plus tips)

The base pay actually offered will take into account internal equity and also may vary depending on thecandidate’s job-related knowledge, skills, and experience among other factors
