Job DescriptionJob DescriptionJob Summary:
The Sous Chef shall be present for all aspects of the food service operations. S/he prepares the meals and functions to provide optimal food service to residents, guests and employees. In addition, the Sous Chef will provide courteous and friendly service of meals in accordance with the establishments quality assurance standards. All responsibilities will be conducted in a manner that is consistent with the Mission and Policies and Procedures of Equinox Terrace.
Job Responsibilities:
•\tAssists dietary staff in the productions of all menu items, including using recipes and production records, using high quality ingredients, operating kitchen equipment, portioning and garnishing.
•\tIn the absence of the Food Service Director, receives all food, supplies and materials and checks incoming merchandise against order sheets. Dates food item when necessary.
•\tKeeps the cooking area clean and handles food in accordance with State regulations.
•\tCleans all kitchen surfaces and equipment according to posted cleaning schedule.
•\tCovers, dates and identifies all open food in production.
•\t Prepares menus to accommodate special diets and portion sizes.
•\tSupervises dietary staff when the Food Service Director is out of the building.
•\tWorks with all dietary staff to complete job assignments including dishes and waiting tables.
•\tCoordinates timely meal service.
•\tIs responsible to prepare and set up food for functions.
Qualifications:
•\tMust have previous experience in a commercial restaurant and/or long-term care food preparation. Serve Safe Certification is preferred.
•\tMust have a degree of flexibility to work some evenings, weekends and holidays as needed.
•\tMust be 18 years of age.
•\tMust be able to respond to unusual circumstances with a professional attitude.
•\tMust be able to follow written and oral directions and be able to communicate in English.
•\tMust annually test negative for Tuberculosis.
Working Conditions:
Equinox Terrace provides a clean, ventilated and well-lit environment. May be subject to following hazards.
•\tInjury from tripping or falls.
•\tInjury from improper lifting techniques.
•\tExposure to pathogens in bodily fluids, infections, odors and behavior of residents.
•\tExposure to chemical/cleaning solutions.
Demands of the Job:
•\tMust be able to lift/push 60 pounds, carry, stand, squat, crawl, reach and kneel using good body mechanics for sustained periods of time.
•\tMust be able to consistently life pots, pans etc. up to 20 pounds in weight.
•\tMust possess sight/hearing senses, or use prosthetics, that will enable these senses to function adequately so that the requirements of this position can be fulfilled.
