WHAT YOU NEED

  • 5 years experience running an upscale, full-service restaurant with full back of house P&L responsibility
  • Some Italian cuisine experience is preferred
  • Knowledge of and ability to use inventory systems, controls and analysis
  • Knowledge of Microsoft Office (Word, Excel, Outlook)
  • Strong initiative, ability to work on your own and direct others

RESPONSIBILITIES

  • Upholds 5-Star Service Standards
  • Engage in strategic planning based on weekly operating reports and monthly profit & loss statements
  • Develop New and Seasonal Menu Items
  • In charge of all kitchen personnel, including:
    • Interviewing, hiring, training and disciplining if warranted
    • Scheduling personnel and supervising daily preparation and presentation of food
  • Purchasing and receiving foodstuffs and kitchen equipment in accordance with standards of quality, freshness and cost.
  • Ensuring thorough safety training of all kitchen personnel and maintaining a safe, hazard-free, environment
  • Monitors and maintains the cleanliness sanitation of the kitchen, storage areas and surrounding
  • Exemplifies the company’s core values of honesty, integrity, respect, commitment and quality.
