The Brookmere Hotel and Regent Restaurant & Bar, opening in November 2024, is actively searching for a passionate, organized, and results-driven Director of Food & Beverage to lead our team of hospitality professionals.


The Director of Food and Beverage will oversee the strategic direction, operational management, and overall success of the food and beverage program at Regent Restaurant & Bar, our 5,000+ sq. ft. of banquet space, and the F&B offerings in the Arbor Spa. Regent Restaurant is an upscale French establishment with approximately 110 seats, including a private dining room. The Director will collaborate closely with the Executive Chef, Hotel General Manager, and the executive sales team to ensure exceptional experiences for diners, bar patrons, hotel guests, and event attendees.


Salary $100k, based on experience.



Essential Functions:

Operational Management:

Oversee day-to-day operations of all outlets, ensuring consistent levels of service are maintained.
Team Leadership:

Lead and mentor restaurant, bar, and banquet managers and all staff, fostering a positive and productive environment.
Guest Experience:

Ensure exceptional guest experiences by maintaining high standards of service, quality, and cleanliness. Address all concerns professionally and timely.
Food Safety and Compliance:

Ensure compliance with all local health and safety regulations, licensing requirements, and company policies. Conduct regular inspections and audits to maintain standards.
Financial Management:

Complete understanding of all outlets' financial management, including all revenue streams and costs.
Hiring and Training:

Conduct interviews, check references, and hire new team members following Hay Creek guidelines and practices. Create and maintain an approved training program focused on the diner experience.
Staff Management:

Manage dining room and banquet staff, ensuring proper uniforms, timeliness, and adherence to Hay Creek disciplinary procedures.
Scheduling:

Complete schedules and forecasting for dining room and banquets according to volume and budget.
Cleanliness and Organization:

Maintain cleanliness in the dining room, banquet rooms, server station, liquor and wine room, and beverage room at all times.
Beverage Management:

Order and receive all beverages, manage specials, organization, yield management, and monthly inventory. Work with bar leadership to ensure proper ordering and inventory is in place.
Sales and Marketing:

Develop and maintain inside sales and marketing strategies (e.g., check stuffers, signs, staff incentives) to increase revenue.
Pre-Meal Meetings:

Conduct daily pre-meal meetings at 4:30 PM to educate staff, discuss issues, and provide feedback on guests, food, and wine. Maintain a logbook.
Banquet Management:

Ensure proper setup with appropriate staff, conduct pre-meal meetings with banquet staff and sales manager, inspect room setup, and print menus/menu cards as needed.
Point Of Sale System:

Update and maintain pricing, make adjustments when necessary, enter specials daily, and maintain counts.
Leadership Meetings:

Conduct weekly one-on-ones with the Hotel General Manager, Restaurant Manager(s), and all relevant leadership team members.
Promotional and Administrative Responsibilities:

Manage all F&B promotional items, menus, advertisements, and the promotional calendar. Maintain and update the associate phone/email list.
Inventory Management:

Conduct monthly inventory and ordering for china, glassware, silverware, uniforms, and linens according to budgetary guidelines.
