We are looking to hire an exceptional Executive Sushi Chef for ro in Hyde Park. The executive chef attracts and retains staff, maintains a cooperative relationship with team members, optimizes staff productivity, and serves as a replacement in team members' absence. You will train staff to execute new recipes, cooking techniques, and oversee food preparation. You will oversee the delivery of food supplies, prepare special dishes, and supervise overall sushi operations.

To ensure success you will ensure your team delivers high-quality, cost-effective dishes promptly. Top candidates are creative, service-oriented, and level-headed.

Supervisory Responsibilities:

  • Hires and trains restaurant staff.
  • Assists in the organization and oversight of staff schedules.
  • Conducts performance evaluations that are timely and constructive.
  • Handles discipline of employees in accordance with company policy.

Duties/Responsibilities:

  • Prepare and assemble sushi dishes according to established recipes and presentation standards.
  • Ensure the quality and freshness of all ingredients used in sushi preparation.
  • Maintain a clean and organized work area, including proper storage and rotation of ingredients.
  • Collaborate with the kitchen team to ensure efficient food production and timely service.
  • Regularly inspect and maintain sushi knives, tools, and equipment to ensure they are in proper working condition.
  • Adhere to all food safety and sanitation guidelines during food preparation and handling.
  • Stay updated on industry trends and new sushi techniques to continuously improve skills and knowledge.
  • Provide excellent customer service by answering questions, taking special requests, and ensuring customer satisfaction.
  • Assist in menu development and innovation by suggesting new sushi dishes and flavors.
  • Train and mentor junior sushi chefs and kitchen staff as needed.
  • Other duties as assigned.

Required Skills/Abilities:

  • Excellent knife skills and proficiency in various sushi techniques, such as cutting, slicing, rolling, and shaping sushi.
  • Strong knowledge of different types of fish, seafood, and other sushi ingredients, including their characteristics and seasonality.
  • Ability to create visually appealing and well-presented sushi dishes that showcase creativity and attention to detail.
  • Effective time management skills to ensure timely food preparation and service.
  • Attention to detail and a commitment to maintaining high standards of quality and consistency in sushi preparation.
  • Ability to work well under pressure in a fast-paced kitchen environment.
  • Strong communication and interpersonal skills to interact with customers, kitchen staff, and management.
  • Knowledge of food safety and sanitation regulations, including proper handling and storage of raw fish and seafood.
  • Flexibility to work evenings, weekends, and holidays as required.

Education and Experience:

  • Proven experience as a sushi chef or in a similar role, preferably in a high-volume restaurant.
  • Culinary degree or relevant certification from a recognized culinary institution is preferred but not mandatory.
  • In-depth knowledge of Japanese cuisine, sushi history, and sushi culture.
  • Familiarity with different sushi styles, such as nigiri, maki, sashimi, and temaki.
  • Ability to handle and prepare raw fish and seafood safely and responsibly.
  • HACCP certification or food safety training is a plus.
  • Physical stamina and dexterity to stand for long periods, lift heavy objects, and perform repetitive tasks.
  • Fluent in English, with proficiency in Japanese or other languages being a bonus.

Physical Requirements:

  • Ability to traverse all parts of the restaurant quickly.
  • Prolonged periods of standing and preparing sushi dishes.
  • Must be able to lift 25 pounds at times.
