Job Description

The specialty lead line cook is the right hand to the room chef. He over sees the prep cook & line cooks to ensure proper adherence to recipes and procedures.

  • Creates and ensures a fresh, positive and exciting environment where sanitation, flawless delivery and execution of product excellence and service are paramount
  • Must have strict compliance to the Blue Chip Employee Handbook and Policy and Procedure Manual
  • Acquired knowledge of sanitation according to State and Federal guidelines
  • Work efficiently and accurately in operating mode
  • Maintain a positive work environment
  • Follow all approved recipes and/or plate presentations
  • Serve all guests according to established standards of quality and pre-determined timeliness and portions
  • Tasting food and evaluating quality points at each stage of preparation
  • Must be detail oriented
  • Depending upon type of restaurant and station, each job is “job specific” – candidate must know cooking application of each
  • Assure that all food and preparation and service areas are in accordance with the local, State, and Federal Health Department Codes
  • Controls food productions in all work areas including proper cooking methods, proper cooking times, and temperatures; ensures correct serving temperatures; proper plating and garnish; and ensures sanitation, handling, and storage of prepared foods and leftovers
  • Monitors “back-of-the-line” setup for efficiency
  • Monitors kitchen maintenance and sanitation program insuring proper use of equipment
  • Monitors and maintains preparation and setup of cooking line.
  • Oversee the line cook and prep cooks.
  • Place orders to proper par levels based on business volumes.
  • Performs all relative miscellaneous duties as directed by supervisor/manager.
Qualifications

  • Able to read, convert recipes according to production requirements
  • Continuous standing, walking for long periods; at time, temperature approximately 85 degrees
  • Periodically pushing and pulling heavy carts and lifting products in proper storage areas
  • Ability to work in contrasting hot and cold areas
  • Lift food items sometimes as heavy as 100 pounds
  • Sufficient knowledge of difficult styles and methods of food preparation and cooking
  • Assist Sous Chef in all aspects of day to day operations
  • Ensure all team members complete task’s as assigned by Sous Chef
  • Repetitive heavy lifting
  • High School diploma or equivalent preferred; either a culinary apprenticeship or an Associate’s degree in Culinary Arts
  • Two years experience in a high volume kitchen, specifically with hot food preparation
  • Ability to develop and scale up recipes in direct proportion
  • Must be able to read, write, and understand English
  • Must be able to understand French terminology as it applies to cooking applications
  • Basic computer skills in Word and Excel
  • Leadership experience and knowledge of food preparation cost and controls
  • Serv-Safe Certified
