Summary of Position

As the Specialist Pizza Cook, you will have extensive experience in crafting artisanal pizzas using a wood-fired oven, demonstrating exceptional culinary skills and a deep appreciation for quality ingredients. This role is crucial in delivering a top-tier dining experience for our guests, reflecting the luxury and excellence that our hotel is known for.

Roles and Responsibilities

Job duties include, although are not limited to:

  1. Prepare and cook a variety of pizzas using a traditional wood-fired oven, ensuring each pizza meets our high standards for quality and taste.
  2. Create and perfect pizza dough from scratch, maintaining consistency in texture and flavor.
  3. Select and prepare fresh, high-quality ingredients, including toppings, sauces, and cheeses.
  4. Collaborate with the Chef De Cuisine to develop and refine the pizza menu, incorporating seasonal ingredients and innovative recipes.
  5. Suggest new pizza offerings and creative combinations that enhance the dining experience.
  6. Maintain cleanliness and organization of the wood-fired oven area, adhering to food safety and sanitation standards.
  7. Monitor and control inventory levels for pizza ingredients, ensuring timely ordering and minimal waste.
  8. Operate kitchen equipment safely and efficiently, particularly the wood-fired oven.
  9. Occasionally interact with guests to explain pizza preparation techniques and take special requests.
  10. Ensure guest satisfaction by delivering high-quality pizzas promptly and accommodating any dietary preferences or restrictions.
  11. Work closely with other kitchen staff to ensure seamless kitchen operations and a harmonious work environment.
  12. Train and mentor junior cooks on pizza preparation techniques and wood-fired oven operations.

QUALIFICATIONS:

  1. Culinary degree or equivalent certification from a recognized culinary institution preferred.
  2. Minimum of 3 years’ experience as a pizza cook, with significant experience using a wood-fired oven.
  3. Previous experience in a luxury hotel or high-end restaurant is a plus.
  4. Proficiency in pizza dough making, stretching, topping, and wood-fired cooking techniques.
  5. Strong understanding of flavor profiles, ingredient pairings, and pizza composition.
  6. Excellent knife skills and attention to detail in food preparation.

PHYSICAL REQUIREMENTS:

  • While performing the duties of this job, the employee is regularly required to stand and walk for extended periods of time, twist at the neck and trunk, bend at the waist and stoop, kneel, crouch, or crawl. The employee is occasionally required to reach with hands and arms, reach overhead, above shoulders and horizontally. Employees will use hands to handle objects and tools and operate service equipment. The employee must regularly lift and/or move up to 25 pounds and occasionally lift and/or move up to 40-pound objects. Vision abilities required by this job include close vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Employees may use vision to monitor food quality and quantity and may also order supplies, etc. Must be physically able to lift up to 50 lbs. and carry heavy trays and equipment, as well as delicate china and barware.
  • Must be able to stand and exert well -paced mobility for up to 7 hours in length. Must be able to lift up to 50 lbs on a regular and continuing basis. Must be able to push and pull carts and equipment weighing up to 250lbs, occasionally. Must be able to bend stoop, squat and stretch to fulfil cleaning/ inspection tasks. Requires grasping, writing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Talking and hearing occur continuously in the process of communication with guests, supervisors and other employees. Requires manual dexterity to use and operate all necessary equipment.
  • Ability to endure abundant physical movements throughout the work areas.
  • Job requires indoor and outdoor service in fluctuating weather
