BASIC FUNCTION (the primary purpose of this position):

Manages physical production of foods and directly supervises the back of the house staff for the Plank House Restaurant. Prepares food according to standardized recipes & approved methods in Plank House, also supervise all team members on assigned shift.

PRINCIPAL ACTIVITIES & RESPONSIBILITIES:

  • Promote a clean, safe, healthy and friendly work environment for employees and guests; report and direct safety issues to the Safety committee or via department leadership.
  • Responsible for F&B staffs' execution of guest interaction standards as outlined by Executive Chef and Department handbook.
  • Ensures that staff has been trained and that they fully understand expectations of the position - up to and including station assignments, daily checklists, recipes, plate presentation, skill set, prep, product rotation and par levels, etc.
  • Maintain time and attendance records and informs the Chef of any edits needed.
  • Maintains weekly specials accordance to the quality level of Plank house restaurant,
  • Provide direction to staff in all areas of employee relations, which includes compliance to established policies and procedures and maintenance of positive moral levels within the workplace.
  • Interact with all food department employees to achieve prescribed cost control measures and production levels.
  • Conducts subordinate evaluations based on performance standards as prescribed by job descriptions.
  • Assist Executive Sous Chef in the creation of menus and costing of all products in Plank house.
  • Assure that food items produced meet quality specifications
  • Prior leadership experience required to oversee all daily kitchen operations and maintain team development.
  • Effectively manage inventories for the department and conduct inventories and cost transfers based on departmental schedule complete with value extension.
  • Tracks receipt of product ordered, assuring par levels are met, and communicates discrepancies (quantity and quality) to kitchen ordering receiving generalist.
  • Assists in expediting food to the Plank House dining room in accordance with approved time standards.
  • Communicates food quality and menu execution issues or concerns to the Chef, and makes recommendations to improve consistency within Plank house operations.
  • Functions as a line cook in Plank House while instructing and performing Supervisory duties.
  • Trains employees to fulfill company goals for specific jobs and maintains rigid sanitation standards in facility.
  • Other duties as assigned

POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience):

  • Four years progressive working kitchen experience, preferred one year experience of mid-management capacity associated with a full-service restaurant.
  • Must be 18 years of age, with GED or HS Diploma.
  • Applicants with a degree in culinary arts will be preferred.
  • Serve Safe certification required or must have the ability to become certified within 90 days of employment.
  • Must have supervised at a minimum, a staff of five people for one year.
  • Proven ability to lead a diverse team with positive results; must demonstrate positive leadership attributes that align with the company culture.
  • Demonstrated ability to work with a minimum of supervision.
  • Must have the ability to provide instructions to others verbally and in written form.
  • Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies

PHYSICAL DEMANDS/WORK ENVIRONMENT (the physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this position. Ability to work weekends, holidays and evening hours as business schedule frequently demands work hours in excess of a standard workweek. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Ability to lift up to 50 lbs. frequently. Occasionally sit. Ability to manage stress appropriately, make decisions under pressure, manage anger, fear, hostility and violence of others appropriately. The casino work environment may expose you to second hand smoke on a regular basis.
