Five Steakhouse, located at Saint John's Resort in Plymouth, MI. Detroit's Destination Resort, an independent, AAA Four Diamond Hotel, Conference Center and Golf Course, is seeking candidates for SousChef in our fabulous Five Steakhouse. Five Steakhouse is a three-meal restaurant that is also responsible for in-room dining. With emphasis placed on creative, sustainable, locally sourced cuisine, and impeccable guest service, this is a wonderful opportunity for an ambitious and progressive-minded Chef to make their mark on the burgeoning food scene in the Metro Detroit area.

The ideal candidate is not afraid to throw down on the line and push the envelope; but still has reasonable business acumen and inherent leadership and teaching abilities. There is a great deal of freedom with menu creation and execution, a dynamic and eager culinary team willing to go above and beyond to make the best cuisine possible, state of the art equipment, and a family-type support atmosphere with the entire culinary team on the property.

The kitchen has two Rational combi-therm ovens, a flat top griddle, low-boy convection oven, 48" 160k BTU gas grill, fryer, panini press, 12-burner sauté station, sous-vide immersion circulators, Cryovac machine, and many other 'toys' to play with. It offers a standard three-station setup (sauté, grill, and pantry) with a good deal of work space for each station.

A passion for culinary arts, drive to evolve and 'push the envelope', formal culinary education (or equivalent work experience), and a minimum of two years' experience as a chef/manager in an AAA Four Diamond environment are preferred. Candidates also must be self-motivated and work well in a structured family-type team environment.

Requirements:

The Sous Chef, under the supervision of the Executive Chef, will oversee culinary operations for Five Steakhouse and in-room dining for Saint John's Resort including:Culinary leadership of Five Steakhouse for a team that includes grill, garde mo, sauté and prep cooks and a utility staff.
Ordering, costing, and inventory management of all food, dry storage, and chemical items relating to restaurant operations.
Adherence to and analysis of budgeted food and labor costs per monthly and annual forecasting in order to maintain and improve bottom line profitability.
Seasonal menu changes placing emphasis on fresh, locally sourced sustainable foods.
Steak and seafood expertise a must.
Execution of proper culinary techniques focusing on scratch cooking with specific recipe development to ensure a consistent, quality, cost-effective product.
Execution and implementation of trending cooking methods including sous vide cooking, house-made charcuterie, basic molecular gastronomy, and farm to fork cookery.
Custom coursed menu creation and execution for themed beer and wine dinners, holiday events, and private 'Chef's Table' degustation.
Coordination and execution of private events for groups of
