Join the prestigious opening team at Doyles Pub, located within Saint John's Resort, next to the brand new "Cardinal" 18-hole championship golf course We are on the lookout for an adept Sous Chef to open our brand-new upscale pub experience. This restaurant will also manage the halfway house and the putting course food. With a commitment to excellence, innovation, and guest satisfaction, we have established ourselves as a leader in the industry.

The ideal candidate will boast prior experience in pubs, golf, or country clubs. Our newly renovated bar, two-story dining room and terrace harmonize with the historic charm of the property, offering a serene terrace overlooking the course for seasonal outdoor dining.

A passion for culinary arts, drive to evolve and 'push the envelope', formal culinary education (or equivalent work experience), and a minimum of two years' experience as a chef/manager in an AAA Four Diamond environment are preferred. Candidates also must be self-motivated and work well in a structured family-type team environment.

Requirements:

The Sous Chef, under the supervision of the Executive Chef, will oversee culinary operations for Doyles Pub along with Golf Course dining options for Saint John's Resort including:

Culinary leadership of Doyles team
Ordering, costing, and inventory management of all food, dry storage, and chemical items relating to restaurant operations.
Adherence to and analysis of budgeted food and labor costs per monthly and annual forecasting in order to maintain and improve bottom line profitability.
Seasonal menu changes placing emphasis on fresh, locally sourced sustainable foods
Execution of proper culinary techniques focusing on scratch cooking with specific recipe development to ensure a consistent, quality, cost-effective product.
Execution and implementation of trending cooking methods including sous vide cooking, house-made charcuterie, basic molecular gastronomy, and farm to fork cookery
Physical RequirementsMust be able to stand for long periods of time
Must be able to lift 50+ pounds
Salary is based upon experience.
