Summary

This position is located in the Nutrition and Food Service of Veterans Affairs Medical Center. Nutrition and Food Service is responsible for providing meals and nutritional care to Veteran patients at the Medical Center. The primary purpose of the Cook, WG-4, is to prepare nutritious, high quality meals for service to Veterans. The position has a sequence of steps that require attention to work operations, sanitation and safety; work assignments may require knowledge and judgement.



Duties

Duties include, but are not limited to:

  • Performs a full range of simple cooking by preparing and cooking items that require little or no processing, such as all forms of hot cereal, pancakes, French toast, sausage, hamburgers, liver, bacon or eggs to order.
  • Assembles and tosses fresh fruit or green salads in quantity using prepared dressings.
  • Uses recipes and follows directions to combine salad and salad dressings. Following standard practices, portions salads and desserts for regular and modified diets.
  • Apportions food items (e.g., gelatins and juices) into standard serving sizes.
  • Sets up tray line with correct supplies and food items, using established guidelines.
  • Delivers meal trays to patients if assigned.
  • Works any assigned (difficult) station on the tray line.
  • Ensures trays are prepared with the correct temperature and neatness and that food items and portions are consistent with the tray ticket and menu.
  • Cleans food preparation and serving facilities as instructed. Thoroughly cleans food preparation and food service work surfaces and equipment as instructed, using a "clean as you go" concept.
  • Cleans and sanitizes trashcans.
  • Cleans walls and ceilings; sweeps and mops floors in work areas as instructed.
  • Washes dishes, silverware, pots, pans, and serving utensils on occasion.
  • Separates and disposes of food waste and trash and scrapes plates or trays; pre-rinses dishes; loads, operates and unloads dish machine as instructed.
  • Maintains dish machine, sets-up, operates, breaks down and cleans dish machine or other comparable equipment or appliances as assigned. Washes and stores food preparation utensils, (e.g., beaters, strainers, etc.) as instructed.
  • Safely disassembles and washes small appliances (e.g., food processors, griddle, coffee urn, vegetable peelers, can openers, etc.) as instructed. Ensures proper assembly of appliance once cleaned.
  • Follows safety procedures regarding operation to avoid personal injury or damage to equipment.
  • Assists higher graded workers in the safe disassembly and cleaning of major appliances (e.g., ovens, grills, mechanical dishwashing equipment, etc.).
  • Assists in proper assembly of appliances after cleaning.
  • Provides food services appropriate to the age of the patient population being served.
  • Performs other related duties as assigned.
  • Maintains dish machine, sets-up, operates, breaks down and cleans dish machine or other comparable equipment or appliances as assigned.
  • Washes and stores food preparation utensils, (e.g., beaters, strainers, etc.) as instructed. Safely disassembles and washes small appliances (e.g., food processors, griddle, coffee urn, vegetable peelers, can openers, etc.) as instructed.
  • Ensures proper assembly of appliance once cleaned. Follows safety procedures regarding operation to avoid personal injury or damage to equipment.
