This is a full time position starting immediately.

Position Purpose

Executive Chef will support the Florida Culinary team at Rad Dim Sum with different duties and responsibilities at the take away kitchen and catering area. Executive Chef, or Head Chef, is responsible for overseeing kitchen staff and ensuring the quality of food items. Their duties include hiring and training staff to cook their dishes, expediting orders to maintain a steady flow of dishes and creating dishes to add to the menu. They will have the opportunity to learn about our dynamic and unique private member’s hotel club at BIBA

Some of their key duties and responsibilities include:

Responsibilities/Duties/Functions/Tasks

Perform at a high level in a dynamic, fast-paced work environment while maintaining a respectful, calm composure and fostering a team environment

Use strong communication skills to maintain clear communications with all culinary and Rad Dim Sum staff, as well as upholding optimal operational performance

Stay up to date and knowledgeable with the staff schedule

Developing unique and cuisine-appropriate menus

Collaborating with the Manager to set item prices

Staying current on developing trends in the restaurant industry

Maintaining the kitchen and surrounding areas in conditions that meet the company standards and health code regulations

Monitoring inventory and purchasing supplies and food from approved vendors

Hiring, training and supervising kitchen staff

Assisting and directing kitchen staff in meal preparation, creation, plating and delivery

Identifying and introducing new culinary techniques

Preparing meals and completing prep support as needed

Become knowledgeable and assist the Culinary team in maintaining a clean, food-safe, and organized kitchen, ensuring all equipment is properly used and cared for while keeping an accurate and up to date inventory record

Become knowledgeable and systematically execute food preparations and transportation with precision, attention to detail, and efficiency

Be a flexible team player willing to do anything to complete Rad Dim Sum Culinary team goals and guest needs – long hours, switching days off if needed, meeting guest needs and expectations.

Qualifications

Previous food and beverage service experience of 5 + years

5 or 6 Star hospitality experience required

Work Requirements

While performing the duties of this job, Rad Dim Sum Chef is regularly required to stand, walk, reach, climb and balance. Additionally, the employee is occasionally required to stoop, kneel, crouch or crawl. The employee is often required to handle, feel, taste and smell. The employee must regularly lift and/or move up to 50 pounds and frequently lift and/or move up to 10 pounds. The employee must be able to work a flexible schedule, including opening, swing and/or closing shifts, weekends and holidays. The employee will also work in extreme temperatures, including a walk-in refrigerator/freezer and kitchen line. The employee must be able to work within a loud and noisy environment.
