This multifaceted role requires not only culinary skills but also leadership acumen and the ability to manage a profitable department.

In overseeing a dynamic kitchen environment, the focus is on optimizing efficiencies wherever possible.

A thriving food and beverage program's menu is an ongoing project, featuring standout dishes crafted from market-fresh, seasonal ingredients, showcasing the strong partnerships the Executive Chef forges with local suppliers.

This position is based at the new DoubleTree by Hilton Clarksville Riverview in Clarksville, TN. Only candidates with prior hotel industry experience will be considered.

Responsibilities:

  • Evaluates local preferences and creates recipes that reflect and enhance the region's unique character.
  • Consistently exceeds guests' expectations in terms of delivery, presentation, and flavor.
  • Builds a loyal customer base.
  • Cultivates professional relationships with local suppliers and maximizes the use of regional ingredients.
  • Demonstrates familiarity with locally available ingredients, seasonal variations, etc.
  • Establishes productive connections with regional and national culinary professionals.
  • Develops an efficient management team.
  • Trains and supervises kitchen staff effectively.
  • Manages kitchen operations to ensure seamless coordination between back-of-house and front-of-house.
  • Creates and enforces protocols for kitchen organization, cleanliness, and maintenance.
  • Leads menu development, kitchen operations, and maintenance in collaboration with kitchen staff.
  • Oversight of all back-of-house staffing decisions, including hiring and training.
  • Prepares weekly kitchen schedules to guarantee adequate staffing for each meal period.
  • Handles all HR-related actions and paperwork for the back-of-house team.
  • Conducts performance reviews for all back-of-house staff and management.
  • Controls expenses by monitoring food, labor, and operational costs.
  • Engages with vendors to source new products and secure competitive pricing.
  • Constantly seeks personal and team improvement, addressing guest feedback promptly.
  • Supports the Events Department in securing and servicing events to enhance revenue.
  • Collaborates with the Sales and Marketing team to promote the restaurant brand across various channels.
  • Proficient in leveraging social media platforms to elevate the property's visibility and reputation.

Qualifications:

  • Deep understanding of the food and beverage sector.
  • Demonstrates superb mastery of recipes, culinary techniques, and ingredients.
  • Previous exposure to press and media is advantageous.
  • Proficient with Windows-based computers, Microsoft Office, and industry-standard software.
  • Successful completion of a background check.
  • Prior experience in the hospitality industry is preferred.
  • Eligible to work in the USA.
