We are currently seeking an experienced and skilled Chef De Cuisine to join our culinary team. As a Chef De Cuisine, you will be responsible for assisting the Executive Chef in overseeing all aspects of our kitchen operations, including menu planning, food preparation, cooking, and staff management. You will be expected to bring creativity, innovation, and leadership to our kitchen to deliver exceptional culinary experiences to our guests.
Responsibilities:
Menu Planning: Develop and implement innovative and seasonal menus that align with the restaurant's concept and target market. Create and update recipes, and ensure consistent quality and presentation of all dishes.
Food Preparation and Cooking: Oversee and participate in food preparation and cooking activities to ensure high standards of taste, quality, and presentation. Train and supervise kitchen staff on proper cooking techniques, food safety, and sanitation.
Staff Management: Supervise and manage the kitchen team, including scheduling, training, and performance evaluations. Foster a positive and collaborative work environment, and promote teamwork and professional development among staff.
Inventory and Cost Control: Manage inventory levels, order supplies and ingredients, and monitor food costs to ensure profitability. Minimize waste and ensure proper storage and rotation of ingredients. Implement and maintain standard operating procedures (SOPs) for the kitchen.
Health and Safety: Ensure compliance with all local health and safety regulations, including proper food handling, storage, and sanitation practices. Maintain a clean and organized kitchen environment at all times.
Culinary Innovation: Stay updated with the latest culinary trends, techniques, and ingredients. Continuously strive for culinary excellence and introduce new ideas and concepts to enhance the dining experience of our guests.
Qualifications:
- Proven experience as a Chef De Cuisine or similar role in a high-volume, upscale restaurant or hotel.
- Culinary degree or equivalent certification from a recognized culinary institution.
- Strong culinary skills with expertise in various cooking techniques and cuisines.
- Excellent leadership and communication skills to effectively manage and motivate a diverse kitchen team.
- In-depth knowledge of food safety and sanitation regulations.
- Ability to work in a fast-paced environment, multitask, and meet deadlines.
- Strong organizational and problem-solving skills.
- Creative and innovative mindset with a passion for culinary excellence.
- Flexibility to work evenings, weekends, and holidays as required.
Skills:
- Proficient in Birchstreet - E Commerce, Microsoft Word, Excel, Outlook and Internet search
- Ability to organize and prioritize work, and provide recommendations
- Must effectively communicate at all business levels, both internal and external
- Ability to multi-task and make independent effective decisions
