About the role: The Lead Production Bread Bakers assist the Bakehouse Production management team in supervision of department operations, including ordering, inventory control, merchandising, food safety, work safety, communication, training of staff. Position Responsibilities: 

Oversees Bakery production team in the absence of department management team.  Daily large-batch from-scratch production of all bakery items, including but not limited to; artisan breads, sandwich breads, rolls, and/or all other specialty goods.  Prepares Bakery department/station for pre-shift work, shift turnovers and end of day breakdown. Guides the work of department staff, including planning and assigning work, planning and assigning breaks, ensuring quality standards, training staff and overseeing their productivity. Processes paperwork and completes orders for daily production.  Checks quality, count and condition of all food preparation products. Communicates any issues to management. Stocks and rotates products in dry and/or refrigeration storage spaces with attention to quality assurance standards and follows first in/first out procedures to assure proper rotation of stock. Labels and dates all food.  Accurate recording of production amounts, waste/shrink and time/temperature information on hard copy or computerized data entry as required. Makes appropriate recommendations and decisions regarding products’ acceptability.  Responsible for implementation and adherence to all Food Quality, Food Safety, and Sanitation guidelines as directed by facility leadership and support office food safety team. Coaches and trains employees on SOPs and SSOPs. Ensures all daily documentation is complete and accurate. This includes but is not limited to daily station sanitation sheets, ingredient logs, Oregon Tilth Certification required documents, and post-operational cleaning checklists. Produces bakery items in accordance with company and regulatory agency standards. Works in a manner that maintains processes and procedures that effectively control production, packaging, shrink, sanitation and equipment maintenance. Supports scale up production for R&D for bakery and other items as requested. Follows all established systems to maintain consistency and integrity of product. Follows all bakery production standards, food safety systems, certified organic systems, policies and procedures. Adjust priorities and tasks as necessary to achieve daily production goals. Notifies department manager on duty or location leadership of any situations relating to food safety, work safety, productivity, security or any other situation that may have an adverse effect on the product or location. Partners with department management team to execute training programs for new and existing procedures. Maintains awareness of current ads, promotions, holidays and events. Demonstrates familiarity with products in department, with willingness to continue learning. Use, maintain, and facility equipment in good working order; immediately advise the management of any maintenance or equipment problems.  Performs other duties and tasks as assigned. 
 

What you Bring as a Candidate:  

Extensive knowledge of key baking techniques, including, but not limited to preparation of all varieties of bread and baked goods.  Previous supervisory experience highly preferred.  A minimum of 2 years of experience in a high-volume production bakery highly preferred. Friendly and service oriented, with an interest in food and baking. Basic math and computation skills required. Skills to work independently, effectively manage own time and multi-task in a fast-paced environment. Skills to adapt to the shifting priorities and needs of a retail environment. Skills to exercise good judgment at all times. Self-motivated, with high attention to detail, quality and presentation. Skills to read, understand and follow through on verbal and written instructions.

Tools Used and Physical Requirements 

Tools and Equipment Used (not all inclusive): This position may be required to use the following tools and equipment: automatic dish washing machines, electric and manual pallet jacks, ladders, carts, hand trucks, box baler, box cutter, floor scrubber, mop, broom, bread slicer, knifes, large-scale mixers, hand-mixers, proofers, ovens and all other automated and manual bakery equipment as needed. Required frequently and up to continuously to be on feet with a mix of standing and walking throughout shift. Sitting seldom required. Up to occasionally, dependent on location, required to climb stairs, step stool and /or ladders. Heavy work level is frequent, with occasional medium work level. (Worker can occasionally lift up to 100 lbs and the ability to frequently lift or carry object weighing 50 lbs.) Have sufficient dexterity to operate machinery such as: automatic dishwasher system, broom, mop, floor cleaning equipment, power washer, disassemble, clean and adjust facility equipment and to clear drains as necessary. Continuously and/or frequently required to use arms, hands and wrists; grasping/squeezing; reach at/above shoulder; reach below shoulder; bend/stoop, twist, crouch/squat Frequency of climbing stairs and ladders dependent on location.

Physical and Environmental Work Space: 

Work occurs in a retail and production environment, which includes surfaces that can be wet and slippery, moderate to high noise levels and temperature extremes in controlled environments (coolers, freezers, prep areas, proofers and retarders). W Working in variable temperatures is typical. There may be exposure to dust, mold, gluten, fragrances and other fumes and airborne particles, fresh fruits, raw meats, vegetables and allergens (Dairy, soy, wheat, shellfish, fish, eggs, nuts and tree nuts) Work requires use of and working in proximity to industrial and commercial cleaning agents.  This position works on or around moving machinery or moving parts.
