Educational Requirements: Associate’s degree or higher in food service management or in hospitality (if the course of study includes food service or restaurant management) from an accredited institution of higher learning.

Experience Required: Two years of direct food service experience and 1 year of management experience.

Professional Licensure and Certification Required: N/A

Job Responsibilities:

·         Work in conjunction with the registered dietitian to create appropriate, nutritionally balanced meals as per state guidelines

·         Prepares schedules for dining room staff, including cooks, waitstaff, and utility workers within allowed labor budget

·         Responsible for ordering of all food and non-food items needed for the kitchen while adhering to allowed budget

·         Hires, trains, counsels and terminates dining room personnel

·         Provides necessary education and training to kitchen staff

·         Assures that all dining room systems are functional before, during and after meals

·         Completes daily rounds to ensure that staff are following policies and procedures regarding cleaning, temperatures, storing of food

·         Required to fill in as a cook/waitstaff/utility worker as needed when the situation arises

·         Evaluate the equipment needs of the kitchen and ensure that appropriate repairs are arranged for

·         Takes inventory of food items, linens, china, glass and silverware and maintains appropriate par levels

·         Works in conjunction with the recreation department to plan special events

·         Responsible for the set up and break down of special events, including cleaning and storage of equipment

·         Perform pre-meal stand up meeting with chefs and dining staff to discuss the daily menu

·         Must be able to instantly handle problems and situations in the dining room

·         Must be familiar with Department of Health regulations and food service codes

·         Required to participate in Quality Assurance meetings and provide reports/audits

·         Participate in monthly Food Committee Meetings, maintain minutes of meetings and respond to resident concerns appropriately and in a timely manner

·         Ensure all resident prescribed diets are adhered to

Qualifications:

·         Serve Safe Food Handler certificate required, Serve Safe Dietary Manager preferred

·         3+ years experience as a cook/chef in a restaurant or hospital/long term care setting

·         Must have previous management experience

·         Must have proficient writing skills and computer literacy skills
