Role Overview

Sodexo is seeking a Area Executive Chef for the Florida District. The idea candidate will be an experienced Executive Chef well versed in culinary, operational leadership, and enjoys training front-line staff in all aspects of culinary and food service operations.  This position will travel and support multiple accounts within the district.

The Area Executive Chef will contribute to the success of multiple accounts, working across multi-districts through delivery of technical performance to achieve culinary success.  Sodexo's executive leaders have a vision for the future and develop strategies that provide direct support to other leaders and teams in our varied operational areas while embodying our core values of Spirit of Progress, Team Spirit, and Spirit of Service. 

Supervises all aspects of culinary including menu planning and food preparation to ensure client satisfaction and retention for the Company.  Serves as technical expert and trainer for other chefs as well as the liaison for communications with District Manager & Senior Area Chef.  Implements business practices to uphold company mission and values. Contributes to account revenue and operating profit contribution through the implementation of services and creation of opportunities for growth.

Ability to travel; 80%.

What You'll Do
  • be responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting;
  • ensure Sodexo Culinary standards including recipe compliance and food quality are implemented;
  • have the ability and willingness to develop and motivate team members to embrace culinary innovations;
  • ensure food safety, sanitation and workplace safety standard compliance; and/or
  • have working knowledge of automated food inventory, ordering, production and management systems.

  • work with customers to plan and cost menus and generate the BEOs (banquet event orders) for all events;
  • manage all catered events from simple breakfast and lunch set-ups and deliveries to high-end, seated, plated and coursed lunches and dinners, to large picnic/buffet events for several thousand;
  • motivate, coach, mentor and develop frontline (hourly-paid), staff who are dedicated to the catering department;
  • increase catering sales using innovation, marketing and promotions;
  • assist in other areas of the food service operation when catering business is slower; and/or track all catered events in the CaterTrax software system, which will encompass ordering and invoicing.
