JOB DESCRIPTION:
The Sous Chef assists with training, assigning duties and supervision of the kitchen staff during the preparation, cooking and garnishment of food items. They will assist in the development of new menu offerings, banquet menus and reviews all banquet event orders to ensure all menu items and set-ups are prepared to Standards. The ideal candidate must be innovative, detail-oriented, and a multi-tasker with good oral communication and interpersonal relationship skills.
ESSENTIAL FUNCTIONS:
- Preparation and production of all meals, food quality and presentation according to assignment.
- Food preparation, including prep work leading up to meal service & events. As well as all necessary cooking on the day-of and during Event.
- Compliance with all safety and sanitation standards and regulations
- Creation and implementation of menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Production Chef and Corporate Chef.
- Compliance with federal, provincial, local and company health, safety, sanitation and alcohol awareness standards.
- Maintenance of sanitary food preparation and storage areas at all times in accordance with provincial requirements and codes.
- Operation of the kitchen, while ensuring the highest standards and quality of produce is being consistently delivered.
- Maintenance of strict health and safety and food hygiene standards.
- Maintain all standards, Handbook guidelines and policies.
- Maintain quality and proper rotation of products.
- Cleaning and care of equipment
- Know MSDS
- Other duties as directed.
QUALIFICATIONS
- Successfully pass a Background Check
- Availability to work Holidays
- Valid Food Handlers Card or Serv Safe Certification required
- Ability to read write and speak English. Also comprehend labels on chemicals.
PHYSICAL DEMANDS
The employee is occasionally required to sit; climb or balance; and stoop or kneel. The employee must frequently lift and/or move objects up to 50 pounds and occasionally lift and/or move objects up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
