GENERAL MANAGER — Future Managing Partner Track

Big Kahuna Wings - West Town is seeking a high-performance General Manager who wants more than a job — someone who wants a long-term partnership and the opportunity to grow into a Managing Partner role.
This is NOT a typical GM position.
This is a role designed for a leader who can:
Take full responsibility
Fix operations and turn around profitability

Grow into a partner with real financial upside
You will start with a competitive lower base salary and gain significant performance bonuses + future profit share based on store results.
KEY RESPONSIBILITIES
1. Restaurant Leadership & Daily Operations
- Lead all daily operations of the restaurant with consistent owner-style discipline.
- Maintain high standards of food quality, speed, accuracy, and hospitality.
- Ensure all team members follow recipes, portioning, safety, and service procedures.
- Manage the shift flow, expo, kitchen timing, and staffing during peak hours.
- Represent the store in front of the franchisor during visits and calls.
2. Financial Performance & Cost Control
Your job is to protect profitability with intensity.
- Own the store-level P&L.
- Achieve labor targets with weekly forecasting.
- Control food cost through portioning, prep accuracy, waste tracking, and ordering.
- Reduce controllables (cleaning supplies, packaging, utilities, etc.).
- Review daily reports and adjust operations accordingly.
- Hold kitchen teams accountable for food execution and ticket times.
3. People Leadership & Talent Development
- Recruit, hire, and onboard high-quality employees.
- Train, coach, and grow KMs, shift leads, cooks, and FOH staff.
- Build a culture of accountability, teamwork, positivity, and urgency.
- Maintain strong communication with the owner and DOO.
- Lead performance evaluations and corrective actions with clarity and fairness.
4. Guest Experience & Brand Reputation
- Ensure hospitality standards exceed franchisor requirements.
- Resolve guest issues professionally and quickly.
- Improve Google review scores — goal: 4.4+.
- Maintain a clean, safe, and welcoming dining environment.
- Build local relationships with guests, schools, offices, and the community.
5. Team Scheduling, Training & Compliance
- Build weekly schedules that match projected sales.
- Adjust labor based on real-time conditions.
- Train and certify employees based on franchisor standards (without overwhelming the operations).
- Maintain all required documentation for food safety, health inspections, and corporate audits.
6. Sales Growth & Local Marketing
- Partner with the owner on promotions, specials, and local outreach.
- Push catering, large orders, and community involvement.
- Launch weekly action plans with team contests, upsell incentives, and guest service initiatives.
WHAT WE ARE LOOKING FOR
Experience
- 5+ years restaurant GM or AGM experience
- Strong operations background in wings, QSR, fast-casual, or high-volume kitchens
- Proven results managing food cost, labor %, staffing, and guest experience
- Ability to handle franchisor demands and standards

COMPENSATION PACKAGE
This role is structured for long-term upside, not short-term salary chasing.
Base Salary:
$50,000+ (based on experience)
Quarterly Performance Bonuses:
Earn $25,000+ annually based on:
- Profitability
- Food cost
- Labor control
- Ticket times
- Sales growth
- Google review score
- Franchisor audit score
Managing Partner Track (24 Months):
If you perform at a high level, you become eligible for:
- 2%–5% profit share
- Tiered ownership participation
- Annual profit bonus
- Retention bonus
- Equity or phantom equity opportunities
- Expansion role bonuses for new stores
This track is designed to create wealth for a GM who truly treats the business like their own.
SCHEDULE & EXPECTATIONS
- Full-time — 45–55 hours/week depending on volume
- Must be available on weekends during busy periods
- Must be reliable, disciplined, and consistent
- Expected to be hands-on during peak times
