POSITION SUMMARY

Craven Wings is seeking an elite Director of Operations (DOO) to take full operational leadership of our two-unit restaurant group in Knoxville, TN — with an aggressive growth path to 3–7 units over the next several years.

This is NOT a typical DOO role.

This is a future equity partner track designed for a leader who wants to build a long-term legacy, turn around struggling units, drive profitability, and scale a multi-unit brand with an entrepreneurial mindset.

You will begin with a strong salary, earn increasing quarterly profit-share, and ultimately become a 10% equity partner for the rest of your tenure.

COMPENSATION & PARTNER PATHWAY

This DOO model rewards long-term loyalty, performance, and business growth.

YEAR 1 – FOUNDATION YEAR

  • Base Salary: $60,000
  • Quarterly Profit Bonus: 5% of total company net profit

YEARS 2–3 – OPERATIONAL EXCELLENCE & GROWTH

  • Base Salary: $60,000 (adjusted based on performance)
  • Quarterly Profit Bonus: 7.5% of company net profit
  • Focus:
  • Strengthen leadership teams (GM/KM development)
  • Improve food cost, labor %, and ticket times
  • Build catering, community partnerships, and sales growth
  • Establish new-unit readiness model

YEAR 5+ – PARTNER STATUS (LIFETIME WHILE EMPLOYED)

  • Quarterly Profit Bonus: 10% of company net profit
  • Equity: 10% ownership of the company (fully vested and retained for the rest of your tenure)
  • Focus:
  • Multi-unit expansion
  • Recruiting and building a leadership bench
  • Preparing for new store openings
  • Long-term wealth building

This model lets you earn more than traditional DOOs by becoming a real business partner.

KEY RESPONSIBILITIES1. Multi-Unit Operational Leadership

  • Lead day-to-day operations for both Craven Wings units
  • Ensure all locations meet high standards of quality, speed, consistency, and hospitality
  • Build systems to ensure replicability for future locations
  • Drive continuous improvement in food quality, cleanliness, and operational discipline

2. Turnaround & Profitability

  • Fix food cost variances and waste
  • Achieve weekly labor targets without sacrificing guest experience
  • Oversee ordering, inventory, invoices, and prep accuracy
  • Identify and eliminate drains on profit
  • Build weekly and monthly profit improvement strategies
  • Turn struggling units into profitable operations within your first 12 months

3. Leadership Development

  • Directly lead GMs, KMs, and FOH/BOH managers
  • Build bench strength across both units
  • Establish a culture of accountability, urgency, and high standards
  • Train and coach managers into strong leaders
  • Create systems to reduce turnover and improve retention

4. Guest Experience & Brand Reputation

  • Drive Google rating improvements
  • Implement guest recovery processes
  • Own customer relationships and weekly service reviews
  • Build community loyalty and repeat visits
  • Bridge the gap between owner expectations and in-store execution

5. Sales Growth & Strategic Initiatives

  • Build catering and large-order pipeline
  • Develop school, sports team, and local business partnerships
  • Improve check average through upsell training
  • Plan and execute local store marketing (within franchise guidelines)
  • Lead initiatives for store growth and new unit preparation

6. Operational Systems, Standards & Compliance

  • Enforce FOH, BOH, and Bar standards
  • Oversee food safety, audits, inspections
  • Maintain equipment, repairs, vendors, and contracts
  • Conduct weekly operational audits
  • Run weekly DOO meetings with all managers
  • Ensure staffing levels meet business needs

7. Financial Control & Reporting

  • Build weekly owner reports (P&L, KPIs, wins, risks)
  • Hold managers accountable to labor/food cost targets
  • Validate invoices, pricing, inventory accuracy
  • Forecast sales and labor needs
  • Protect cash flow and eliminate unnecessary expenses

8. Expansion & Growth (Future Units)

  • Build systems that scale
  • Prepare for new store openings (location #3+)
  • Recruit and train future GMs and leaders
  • Help source real estate, staff planning, and equipment standards
  • Become the operational engine of the company's growth

The DOO is expected to achieve:

Food cost reduced by 2–4%

Labor aligned to weekly targets

Ticket times improved to brand standards

Both units fully staffed with strong leadership bench

Google rating increased to 4.4+

Catering pipeline established

Company profitability stabilized and trending upward

Owner no longer needed for daily operational issues

SALES UPTICK & MARKET-LEVEL GROWTH LEADERSHIP (PRIMARY RESPONSIBILITY)

As Director of Operations, your MOST important responsibility is to create continuous sales growth through world-class service, strong guest relationships, and strategic community engagement.

You are directly accountable for achieving consistent week-over-week, month-over-month sales increases across both Craven Wings locations.

To accomplish this, you will be responsible for:

A. Elevating Guest Experience (Service → Sales Engine)

  • Ensuring every guest receives friendly, speed-driven, flawless hospitality
  • Increasing repeat visit rate through service excellence
  • Running FOH training that consistently lifts check averages
  • Improving Google rating and review velocity
  • Reducing complaints and turning them into returning fans

Goal:

World-class service that organically drives sales without discounts.

B. Building Local Community Relationships

You must become the face of Craven Wings locally by creating ongoing revenue pipelines through:

  • Schools, sports teams, and booster groups
  • Local businesses and offices
  • Community events
  • Churches and nonprofits
  • Real estate offices, dealerships, construction teams
  • Repeat weekly lunch & catering partners

Goal:

Establish 10–20 recurring community revenue partners per year.

C. Catering & Large Orders Expansion

Catering is a major profit lever and the DOO must:

  • Build a catering sales program
  • Create weekly catering outreach lists
  • Visit 3–5 businesses per week
  • Train staff on catering order accuracy
  • Promote catering during peak seasons

Goal:

Achieve predictable catering revenue growth, month after month.

D. Interior Marketing Through Service (No Coupon Required)

Within franchise guidelines, DOO must leverage:

  • Table touches by leaders
  • FOH upsell scripts
  • Suggestive selling
  • In-store contests to boost average check
  • Highlighting signature items verbally

Goal:

Increase check average by $2–$5 over 90–180 days.
