Located in the heart of Waikiki at the Royal Hawaiian Center, Doraku Sushi blends traditional Japanese craftsmanship with modern creativity. We're looking for a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate values precision, teamwork, and presentation while sharing our commitment to exceptional guest experiences.

Responsibilities

  • Prepare and present sushi, sashimi, and rolls with accuracy, quality, and consistency.
  • Ensure all seafood and ingredients meet freshness and food safety standards.
  • Maintain cleanliness and organization of the sushi bar and prep areas.
  • Collaborate closely with the kitchen and service teams to ensure smooth service.
  • Contribute ideas for new dishes, specials, and seasonal offerings.
  • Monitor inventory and communicate supply needs to management.
  • Uphold Doraku's standards of hospitality and excellence.

Qualifications

  • 2+ years of professional sushi experience preferred; training available for the right candidate.
  • Strong knife skills and attention to detail in both preparation and plating.
  • Understanding of proper food handling and storage procedures.
  • Positive attitude, strong communication, and team-oriented mindset.
  • Passion for Japanese cuisine and dedication to guest satisfaction.
