The Line Cook is responsible for working in a fast-paced kitchen environment, preparing high-quality dishes with precision and attention to detail. You will collaborate closely with the kitchen team to uphold Modan's standards of excellence and deliver an exceptional dining experience to our guests.

 

ESSENTIAL JOB FUNCTIONS:

 

  1. Food Preparation and Cooking:
    • Prepare and cook a variety of Japanese-inspired dishes according to Modan's recipes and standards.
    • Work efficiently on the hot line, grill, or other designated stations as assigned by the Head Chef or Sous Chef.
  2. Order Execution and Quality Control:
    • Execute all food orders with accuracy and consistency, ensuring timely delivery to guests.
    • Maintain a thorough working knowledge of recipes, ingredients, allergens, and food presentation.
  3. Kitchen Cleanliness and Organization:
    • Maintain cleanliness and organization of the kitchen, including workstations, equipment, and storage areas.
    • Follow all food safety and sanitation protocols, including proper handling and storage of ingredients.
  4. Inventory and Stock Management:
    • Ensure all products and prepared items are properly labelled, dated, initialled, covered, and rotated following FIFO (first in, first out) principles.
  5. Collaboration and Teamwork:
    • Collaborate with other kitchen staff to ensure smooth and efficient operations during service.
  6. Opening and Closing Procedures:
    • Follow opening and closing procedures as instructed by kitchen management.
  7. Commitment to Excellence:
    • Uphold Modan's commitment to quality, excellence, and guest satisfaction in every aspect of food preparation.
    • Operate ethically to protect the image of the company.
  8. Additional Duties:
    • Perform other duties and responsibilities as required or requested by management.

 

JOB KNOWLEDGE, EXPERIENCE, AND SKILLS:

 

  • Previous experience as a Line Cook or similar role in a high-volume restaurant environment, preferably with Japanese cuisine experience.
  • Strong knowledge of Japanese cooking techniques, ingredients, and Flavors is highly preferred.
  • Ability to work efficiently under pressure in a fast-paced kitchen environment.
  • Excellent knife skills and culinary techniques.
  • Attention to detail and commitment to maintaining high standards of food quality and presentation.
  • Culinary degree or relevant culinary training is a plus.
  • Ability to work flexible hours, including evenings, weekends, and holidays, as required.

 

PHYSICAL REQUIREMENTS:

 

  • Ability to perform the essential job functions safely and successfully in accordance with ADA, FMLA, and other federal, state, and local standards, including meeting qualitative and/or quantitative productivity standards.
  • Must be able to lift and carry up to 50 lbs; ability to stand for prolonged periods of time and climb steps regularly.
  • Ability to physically work areas; bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
