We are seeking a highly skilled and experienced Executive Sous Chef to join our team at Legends, a leading provider of premium experiences in the sports and entertainment industry.
Key Responsibilities- Support the Executive Chef in overseeing all culinary operations, including production, operation, and sanitation aspects of culinary and stewarding operations.
- Manage daily schedules, coordinate event operations, and monitor food and labor costs to ensure efficient and effective service.
- Develop and implement innovative menu offerings in response to guest and client feedback, while maintaining high standards of quality and presentation.
- Lead a team with respect and commitment to exceeding guest expectations daily, fostering a positive and productive work environment.
- Monitor all food preparation and kitchen activities to ensure compliance with health and safety regulations, and maintain a clean and sanitized work environment.
- Write, cost, test, and maintain menu specifications, recipes, and production forecasts, ensuring consistency and quality across all operations.
- Adhere to and enforce inventory and labor control measures, performing inventory counts as requested to ensure accurate tracking and management.
- Provide exceptional customer service by maintaining positive relationships with guests and clients through effective communication and prudent financial practices.
- Ensure all workstations, storerooms, and dining areas remain clean, sanitized, safe, and in proper working order at all times.
- Bachelor's degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation.
- Minimum three years' experience in a high-volume full-service food operation, with a proven track record of improving kitchen efficiencies, quality, and relative costs.
- Excellent leadership, financial analysis, team building, and communication skills, with the ability to multitask in a fast-paced environment.
- Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment, with the ability to learn new programs and procedures quickly.
- Proficiency in Microsoft Word, Excel, and PowerPoint, with the ability to work extended hours, including nights, weekends, and holidays.
- Ability to obtain Food Protection Manager Certification, with a strong commitment to safety and compliance.
