Key Responsibilities:

  • Prepare and create Sushi offerings on the menu with minimal oversight, adhering to standard recipes.
  • Assemble and present sushi, sashimi, and maki rolls in an aesthetically appealing manner.
  • Provide guests with an engaging experience by allowing them to observe the preparation of their meals.
  • Process whole fish into fillets and smaller portions for culinary use.
  • Coordinate preparation times with other kitchen activities to ensure efficiency.
  • Maintain cleanliness and sanitation in assigned work areas and equipment.
  • Properly close the workstation using the designated closing checklist.
  • Communicate effectively and courteously with both front-of-house and back-of-house staff.
  • Manage inventory levels and communicate orders to the purchasing department.
  • Report any accidents, illnesses, or near-miss incidents to the supervisor immediately.
  • Complete all required training related to company policies, departmental procedures, and safety protocols.
  • Adhere to the department's appearance and dress standards.
  • Perform additional tasks as directed by the Executive Chef or Sous Chef based on operational needs.

Qualifications:

  • Proficient in using, or willing to learn to use, all necessary kitchen equipment, including specialty knives.
  • Minimum of two years' experience in a commercial kitchen environment.
  • Ability to understand and follow both verbal and written instructions in English.
  • Availability to work during holidays, weekends, and overtime as required.
  • Capable of working independently in the absence of supervision.
  • Ability to establish and maintain positive working relationships.
  • Physical stamina to stand for extended periods and perform various movements including climbing, bending, and lifting.
  • Capacity to thrive in a fast-paced kitchen environment.
  • Ability to lift, push, or pull up to 50 pounds.
  • Engage in continuous repetitive motions as part of the role.
  • Work effectively in a guest-facing environment.
  • Successfully complete all Food Safety Certification requirements.
