Overview: The Sushi Chef is responsible for preparing and crafting authentic Sushi dishes in accordance with Basin Harbor's established recipes, utilizing a range of culinary tools and equipment. Key Responsibilities:
- Prepare and create the Sushi offerings on the menu with minimal oversight, adhering to standardized recipes.
- Assemble and present sushi, sashimi, and maki rolls in an appealing manner.
- Provide guests with the opportunity to observe the preparation of their meals.
- Process whole fish into fillets and smaller portions for various dishes.
- Coordinate preparation tasks with other kitchen operations to ensure efficiency.
- Maintain cleanliness and sanitation in assigned work areas and equipment.
- Properly close the station at the end of the shift using the designated checklist.
- Communicate effectively and courteously with both front-of-house and back-of-house staff.
- Manage inventory levels and communicate orders to the purchasing department.
- Report any accidents, illnesses, or near-miss incidents to the supervisor immediately.
- Complete all required training related to company policies, departmental procedures, and safety protocols as directed by the supervisor.
- Adhere to the department's appearance and dress code standards.
- Perform additional tasks as assigned by the Executive Chef or Sous Chef based on operational needs.
Qualifications:
- Proficient in using, or willing to learn to use, all necessary kitchen equipment, including specialty knives.
- A minimum of two years of experience in a commercial kitchen environment.
- Ability to understand and follow both verbal and written instructions in English.
- Availability to work during holidays, weekends, and overtime as required.
- Capable of working independently in the absence of supervision.
- Ability to establish and maintain positive working relationships.
- Physical capability to stand for extended periods, walk, climb stairs, and perform various physical tasks.
- Capacity to thrive in a fast-paced kitchen environment.
- Ability to lift, push, or pull up to 50 pounds.
- Engage in continuous repetitive motions as part of the job.
- Experience working in a guest-facing environment.
- Successfully pass all Food Safety Certification requirements.
