Position Overview

Cozzini LLC is a prominent name in the realm of innovative food processing solutions, leading the charge in technology advancements within the food sector. Our Protein Innovation Center (PIC) is a vibrant facility dedicated to showcasing and demonstrating cutting-edge protein processing systems.

Key Responsibilities:

  • Deliver exceptional communication, both verbally and electronically, with internal teams and external partners.
  • Ensure the facility is maintained in a pristine, showcase-ready condition, including thorough cleaning and sanitization of all surfaces post-events.
  • Oversee multiple projects simultaneously, ensuring timely execution and quality outcomes.
  • Implement food safety protocols in accordance with Codex Alimentarius (GFSI) guidelines.
  • Develop effective strategies to address unexpected business challenges.
  • Serve as a subject matter expert in protein marination and product curing processes.
  • Manage basic test kitchen supplies and equipment.
  • Troubleshoot equipment issues to identify variables and deficiencies.
  • Maintain accurate records, manage scheduling, and oversee protein inventory and supplies.
  • Design and organize standard training programs for the PIC.
  • Source suppliers for protein and dry ingredients.
  • Perform additional duties as required.

Qualifications:

  • Bachelor's degree in food science or a related field.
  • Culinary training with a focus on ingredients, meat science, sanitation, and processing is preferred.
  • Experience with high-speed food manufacturing equipment is highly desirable.
  • A minimum of 5 years in meat processing is required.
  • Familiarity with beef and pork primal cuts.
  • Basic knowledge of meat and poultry laboratory science.
  • Understanding of processed meats, including dried cured, coarse ground, and emulsification techniques.
  • Knowledge of ingredient functionality in relation to food product development.
  • General awareness of USDA/FDA food safety regulations.
  • Experience with food safety protocols in line with Codex Alimentarius (GFSI) guidelines.
  • Previous or current HACCP certification is advantageous.
  • Background in the Global Food Safety Initiative is a plus.
  • Valid driver's license is required.
  • Willingness to travel locally for supply and ingredient procurement.
