Position Summary:
Oversee and collaborate with culinary staff across various stations in a dynamic kitchen environment. Manage food preparation according to established recipes and portion standards for a high-volume dining setting. Ensure the kitchen and related areas are properly opened and closed at the start and end of shifts. Assist in receiving food supplies and maintaining cleanliness in storage areas, ensuring proper food handling and rotation for freshness. Support the Chef in managing inventory levels and guarantee that all guests receive an exceptional culinary experience while promoting a sustainable and profitable kitchen operation.
Position Specifications:

- Compensation: $20.00 / hour plus tips
- Experience Level: Lead
Key Responsibilities:
- Assist in menu development and uphold high standards in all food and beverage offerings.
- Advise on preparation methods to optimize cost efficiency while ensuring adherence to best practices.
- Supervise and assign tasks to kitchen staff.
- Communicate departmental issues to the Sous Chef.
- Implement quality control measures to ensure consistency in all food items.
- Ensure proper storage and rotation of food ingredients.
- Manage timely and accurate supply orders for the department.
- Analyze and control product transfers, waste, and spoilage.
- Maintain a solid understanding of departmental financials and labor budgets.
- Assist with inventory management and cost control measures.
- Follow Vail Resorts Culinary Guidelines, including health and sanitation standards.
- Safely operate and maintain all kitchen equipment.
- Demonstrate advanced culinary skills and banquet preparation techniques.
- Ensure compliance with HACCP and Serve Safe Culinary Guidelines.
- Prepare food according to Sous Chef specifications and uphold the same standards among staff.
- Conduct lunch audits and monitor overtime reports.
- Perform additional duties as assigned.
Job Requirements:
- High School Diploma or equivalent.
- A minimum of 3 years of experience in restaurant or culinary services.
- At least 1 year of supervisory experience.
- Proficient in Microsoft Office.
- Ability to communicate effectively in English.
- Capable of lifting 50 lbs.
- Able to stand for extended periods.
Preferred Qualifications:
- Culinary degree.
- Ability to communicate in Spanish.
