Assistant Food and Beverage Director

Troon Golf is seeking a highly skilled and experienced Assistant Food and Beverage Director to join our team at Tumble Brook Country Club. As a key member of our hospitality team, you will be responsible for directing and overseeing all food and beverage facets, including guest satisfaction, personnel management, menu mix, ordering, vendor preference, food production, inventory, and catering functions.

Key Responsibilities:
  • Schedule Management: Set and implement schedules for the restaurant, banquet, and beverage cart departments to ensure seamless operations.
  • Inventory Management: Assist in the completion of all month-end inventories, including the kitchen, bars, and beverage cart, to maintain accurate stock levels and control costs.
  • Menu Development: Work closely with the kitchen to ensure expedient ticket times, excellent food quality, and proper plate presentation, while implementing recipes and retail pricing of products.
  • Team Management: Manage and assist in the hiring, training, planning, assigning, and directing work of department members, including Restaurant Manager, Catering Manager, Executive Chef, Host, Set Up Staff, Cooks, and Servers.
  • Marketing and Promotion: Assist in the marketing of the restaurant and catering departments, both internal and external, to increase revenue and customer engagement.
  • Event Management: Manage the floor of all banquet events, ensuring exceptional service and attention to detail.
  • Quality Control: Promote and implement all Troon Golf standards, procedures, and policies to maintain high-quality service and products.
Requirements:
  • Education: Associate's degree (AA) or equivalent combination of education and experience.
  • Experience: Six months to one year of related experience and/or training in food and beverage management.
  • Skills: Food Safety and Applicable Sanitation Training, Alcohol Awareness Training, and knowledge of Microsoft Office applications and POS systems.
