Executive Sous Chef

**Job Summary**
Thomas Cuisine is seeking an experienced and skilled Executive Sous Chef to join our team. As a key member of our culinary team, the Executive Sous Chef will be responsible for overseeing the daily operations of the kitchen, ensuring that all food is prepared to the highest standards of quality and presentation.
**Key Responsibilities**
• Verify that kitchen staff follows all recipes and portion control procedures correctly.
• Observe all food stations to eliminate waste and ensure the freshest products are used.
• Ensure that staff has a clean and sanitary work station/area by practicing the clean as you go method.
• Supervise and train staff in preparing, cooking, and serving meats, carving, sauces, vegetables, soups, mise en place, and other food products.
• Ensure all stations remain stocked before and during meal periods.
• Produce daily production sheets and records leftovers.
• Plan and create requisitions for ordering.
• Receive and examine food products and supplies to ensure quality and quantity meet established standards and specifications.
• Maintain all Hazard Analysis and Critical Control Points (HACCP) standard operating procedures.
• Keep kitchen, dish, and storage areas clean and organized.
• Assign, direct, and review the work of subordinates, work methods, procedures, work flow, and standards for quality and quantity of work.
• Mentor and train existing staff as well as new staff.
• Assist in monitoring the job performance of staff and managing staffing levels throughout shifts.
• Assume responsibility for the kitchen in the absence of the Chef.
• Other duties as assigned.
**Requirements**
• High School Diploma/GED.
• Approximately three to five years of experience in an institutional or high-volume restaurant/food service establishment.
• Serve Safe certified.
